Sure, here's a basic recipe for Beef
Biryani:
Ingredients:
For the marination:
500g beef, cut into cubes
1 cup yogurt
1 tablespoon ginger-
garlic paste1 teaspoon
turmeric powder1 teaspoon
red chili powder1 teaspoon
garam masala powder
Salt to tasteFor the rice:
2 cups basmati rice,
soaked for 30 minutes and drainedWater for boiling riceWhole spices (2 bay leaves, 4-5 cloves, 4-5 green cardamom pods, 1-inch cinnamon stick)Salt to tasteFor assembling the biryani:
2 onions,
thinly sliced2 tomatoes,
chopped1/2 cup chopped coriander leaves (cilantro)1/2 cup chopped mint leaves
2-3 green chilies,
slit lengthwise
1/4 cup fried onions (optional, for garnish)
Ghee or oilSaffron strands soaked in
2 tablespoons of warm milk
(optional)Instructions:
Marinate the beef:
In a bowl, combine the beef cubes with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala powder, and salt. Mix well to coat the beef evenly. Marinate for at least 1 hour, preferably longer (overnight in the refrigerator).Cook the rice:In a large pot, bring water to a boil. Add salt and the whole spices (bay leaves, cloves, cardamom pods, cinnamon stick).Add the soaked and drained rice. Cook until the rice is 70-80% done (parboiled). Drain and set aside.
Prepare the fried onions:
Heat oil in a pan and fry thinly sliced onions until golden brown and crisp. Remove from oil and drain on paper towels.
Assemble the biryani:
In a heavy-bottomed pot or pan, heat ghee/oil. Add the marinated beef and cook until it is browned and tender.Layering:Once the beef is cooked, layer half of the rice over the beef in the pot. Sprinkle half of the chopped coriander leaves, mint leaves, tomatoes, green chilies, and fried onions over the rice.
Repeat the layering:
Add the remaining rice over the first layer. Sprinkle the rest of the chopped coriander leaves, mint leaves, tomatoes, green chilies, and fried onions.
Optional garnish:
Drizzle the saffron milk over the top layer.Dum cooking (slow cooking):Cover the pot tightly with a lid or seal with aluminum foil. Cook on low heat 25mints dum
