(Finished 17 cm * 6 cm cake)
♥ Chocolate Sponge Cake
--- Mold 18cm
4 eggs
100 g sugar
20g honey
A pinch of salt
5ml vanilla extract
95g cake flour
1/2 tsp baking powder
15g cocoa powder
45g milk
40g unsalted butter
♥ Dark Chocolate Ganache Cream
200g dark chocolate
100g heavy cream (A)
15g starch syrup (OR Glucose)
5g unsalted butter (optional)
300g heavy cream (B)
♥ Chocolate Flakes
♥ Making daisy flowers for decoration

50g water
35g sugar
5ml Kahlua (Option)

Melt sugar in the microwave.
Add Kalua and mix

이런종류의 케이크 너무 만들고 싶었는데, 자세한 레시피 감사드려요^^ 조만간 딸 아이의 생일인데 생일케이크로 만들어달라고 하네요ㅋㅋ한가지 궁금한게 있는데요. 여기서 사용하신 다크초콜릿은 카카오 몇%인가요??저는 미국에 살아서 주로 기라델리나 린트 초코바를 사용하는데요. 다크는 카카오함유량 종류가 워낙 다양해서 뭘 사용해야할지 모르겠어서 문의드려요. 베이킹 초보로 모르는게 너무 많네요ㅜㅜ

나리님~~ 저는 깔리바우트 58%를 사용했어요 ~~. 그리고 초콜릿 부스러기 만드실때.. 요즘 날씨가 더워서 작업 하기 힘들 수도 있어요. ㅜㅜ 초콜릿은 템퍼링이 질 안 되면 녹기 쉬워요.. 그리고.. 잘 되었다해도 날씨가 더우면 또 잘 녹지요..ㅜㅜ 그럴땐.. 초콜릿 부스러기 나오는 곳에 아이스팩 하나를 놓고 종이 호일을 올리고 만들거나.. 팬을 냉동실에 넣었다가 그 위에 부스러기를 놓으면 덜 녹아요.. 따님분 생일 잘 보내시길 바래요 ~~😊🥰

드디어 만들었어요!! 가나슈생크림 진짜 맛있어요!! 다크초코 덕분에 약간 씁쓸한듯 달고 무작정 달지 않아서 넘 맛있더라구요 시트도 다굽고 나서 뚜껑 먹어 봤는데 아니 무슨일 ㅋㅋㅋㅋㅋㅋㅋㅋㅋ 뚜껑마저 왤케 맛있어!!ㅋㅋㅋㅋㅋㅋㅋㅋㅋ 살알짝 생크림 분리의 위기를 느꼈지만 다행히 아주 살짝이라 아이싱동 잘 마무리했어요 남편 생일이 내일이라 지금 냉장고에 있는데 얼른 먹고 싶어요 덕분에 즐거운 생일파티 할 거 같아요 정말 감사해요!!♡♡

안녕하세요. 어제 초코 크림이 필요해서 요 레시피로 만들었어요. 맛은 너무 좋은데...제가 뭘 잘못했는지 크림이 좀 묽어요. 제가 제 잘못을 생각해 봤을때 생크림과 설탕 휘핑을 한 50프로까지 했다. 두번째는 가나슈의 온도가 높았다로 추측할수 있는데.. 가나슈의 온도가 미지근 정도 하면 될까요?그리고 생크림 휘핑정도도 중요 할까요? 만약 이렇게 묽게 되었다고 하면 냉장고에 두었다 휘핑하면 단단해 질까요? 분베이크님께서 모든분께 답 달아주신거 보고 저도 희망을 갖고 질문해봅니다 이렇게 답글 다 달아주신분은 처음 봤어요.좋은 레시피 앞으로도 많이 부탁드려요

안녕하세요~~^^ 애써서 만든 크림이 잘 안 나와서 많이 속상하셨겠어요..ㅜㅜ 제과에 있어서 미세한 차이로 제품의 결과물이 참 다르죠. 제과는 참 섬세한 아이입니다. 고민해 보셨다는 그 이유가 맞아요.. 생크림과 설탕 휘핑하는 것을 좀 더 올려 주셔야 해요. 그리고 가장 큰 원인은 가나슈의 온도입니다. 생크림과 가나슈가 섞였을 때의 온도가 10도 이상이 된다면 크림은 묽어진답니다. 이 가나슈 몽떼 크림을 만드는 방법은 여러 가지가 있어요. 안정적인 방법으로 만드시려면 가나슈 크림을 영상처럼 만들고 가나슈와 차가운 생크림 (휘핑하지 않은 것)을 섞어서 냉장고에 4~5 시간 냉장 휴지해서 사용전에 휘핑하여 사용하는 방법이에요. 그렇게 한다면 안정적으로 크림을 만들 수 있어요. 보통 전날 작업을 해 놓기도 하고요. 하지만 제가 이 케이크에서 이 방법을 사용한 이유는 겉에 초콜릿을 붙일 예정이라 완전 매끈한 크림까지 만들 필요가 없고 빨리 만드는 방법을 보여드리기 위함이였어요.~~^^ 만약 가나슈 온도가 덜 식었는데 섞었다.. 그런데...묽다...하시면 바로 냉장 해 주세요. 온도가 너무 높은 크림을 너무 오래 휘핑하면 분리가 나 버리거든요~ 제 영상 중에 냉장 휴지 후 가나슈 몽떼 크림을 만드는 것도 있으니 한 번 봐 주세요~~^^ 글로 하려니 부족한 점이 있을 수 도 있어요. 좋은 주말 보내세요.🥰💖💕
