Bostock is one of my favourite go to pastries! It is easy to make and it looks and tastes amazing! All you need is some day old brioche, some almond cream and a quick and simple syrup to put it all together!

150g bread flour
155g milk
14g instant yeast
Dough
Prepared sponge
345g bread flour
8g kosher salt
50g sugar
2 eggs
3 egg yolks
1pc lemon, zest
1/4pc vanilla pod, scrape seeds
185g butter, room temperature, cut into 1" pieces

Almond Cream
250g unsalted butter
250g almonds
250g icing sugar
50g all purpose flour OR 30g cornstarch
5 eggs
Orange Blossom Syrup
250g water
160g sugar
2Tbs orange blossom water
As needed sliced almonds
As needed icing sugar
