I have been asked to make a carrot cake for a wedding shower in July, I have watched many videos on making a tiered cake, which I think is doable, however, I am afraid of the cream cheese icing melting in transport. The ride is about 30 minutes. I like the way you use a box for transport. Any ideas as to how I can keep icing intact? I do plan on making a stiffer icing.

Refrigerate the cake overnight so that the icing is cold and stiff, and it will be easy to transport. I refrigerated everything, and the cakes were stiff enough to hold up to being moved around in 90+ degree weather in the summer in Virginia, which is humid and gross. If you put it int he box straight from the fridge, with a carpet non-skid mat on the bottom of the box, it won't move around, and the closed box will protect it from the heat. You should also blast the air conditioning in the car to be on the safe side, and make sure to put the cake box flat, don't ever put it on a tilted car seat. If you have the non-skid carpet mat on the floor of the car and also a piece of it inside the box, and the cake is cold, it won't go anywhere. The only time I ever heard of people having problems with the icing sliding was when they were delivering things at room temp.

@@KaraBuntin Thank you so much for responding, it gets hot and humid in NJ also, I will refrigerate and air is no problem in July.
