I bought and used this mixer for nearly 20 years, gave it away and it still works perfectly. I did (and still do) grind my wheat myself, I just do 1-2 loaves these days. When I was doing 5-6 loaves of that w.w. bread, I always used the excellent dough hook. It's what Electrolux recommended back then. Plus, I didn't have to fiddle with the roller to do it. A great mixer with a cheesy set of whisks and plastic bowl.

I bought a used Ank 6 months ago. The dough is amazing and so easy to work with. the texture is a higher hydration bread, more like we had in Europe. Also, I have started kneading bread without any flour or oil. Check out the French method of slap, stretch and fold. It works the dough beautifully.

Just want to say, the Ank does an outstanding job kneading low hydration doughs with the roller. In fact, while the Ank’s been around since 1940, the hook wasn’t introduced until the 1990s when they began selling them to the USA market. Americans, used to their KA dough hooks, wanted a hook. But there’s really never a reason to resort to a tool that twists and rips your dough. . .the roller will do it all, gently.

Hi Amy & Eric. I've been waiting for you guys to put this mixer through the grinder and this machine handled that bread dough so easily it wasn't even a challenge. This mixer are for those people who are absolutely serious about bread baking. As powerful as the Bosch mixer is, I don't think it can out do the Ank when it comes to bread . The engineering and kneading action of the Ank puts it in a league of its own when it comes to mixers. Thanks for the great video. !!!!! P.S. the bread looks beautiful.

The best thing about the Ank, is that you use less flour and make a softer dough. This is where it really shines. You would be surprised that the Ank also does as well with smaller quantities as it does with larger recipes. So, both the kneading action and more versatility in quantities gives the Ank an edge over the Bosch in at least two ways. Well, the Ank is also more attractive.

Thank you for watching. Yes, the Ank is amazing. We like the Bosch, but at the risk of upsetting their fans, I feel like the Bosch takes longer to knead because it 'grabs' on one of three passes. Planetary stretches the dough good (depending on hook size and shape, not all are good). But the Ank is gentle, but consistent in its kneading.

I like the sound of the motor. It sounds very smooth and powerful, no whining, grinding etc like some mixers. You can sort of tell when the dough has enough flour when , like with the Bosch, the side of bowl and that roller start coming clean. I'm talking myself into getting one now LOL

I've never thought to use a muffin pan for bread rolls and I now am eager to try it! Thanks for the video, I loved learning more about the unique action of the Ankarsrum and seeing your baking process from start to finish. I'd love to hear you talk about how different mixers make the bread and other baked goods taste different. Does the gentler kneading of the Ankarsrum make for less dense bread? I hope to get an Ank someday! Quiet, mixes superbly, powerful enough for any dough, can mix a little or a lot, has all the attachments available, and isn't hard to clean. Sounds pretty perfect. This is the mixer I fantasize about the most, and so I really enjoy these videos. I aspire to follow in your footsteps and cook like this myself! Thanks for the inspirations for this home cook and budding baker!

One tip..for a super soft roll, put flour into the mixer, add your fat, then beat the fat into the flour first thoroughly. This will segregate the flour away from each other, interrupting the gluten, makes a softer end product. Again, flour might be a judgment call, but beginners should resist adding flour until it’s not sticky; tough, dense breads are usually caused by too little hydration or too much flour. Weigh, weigh, weigh! Even water..weigh everything..! Plus, beginners, if a dough seems sticky, in fifteen minutes it might be perfect after resting a bit!

For the Ankarsrum, it's best to add liquids first then to add flour until the dough reaches the correct consistency for the recipe. The reason being that due to the unique kneading process the Ankarsrum uses, you'll often need way less flour than a recipe calls for.

@@latui7350 Good point! Starting with the liquids first is described in the instructions several times. I love my Ankarsrum! I actually placed an order for the $700 ""Heavy Duty" Kitchenaid bowl lift stand mixer with Amazon but after reading the reviews and seeing how many folks were unhappy with how the manufacturer has cheapened the machine in the 20 years by using plastic gearboxes instead of the older more costly heavy metal gearboxes., etc. I said to myself this is a lot of money and started searching for a better-built and more reliable machine. I found it at Pleasant Hill Grain in Nebraska, the ONLY company in the USA that sold these Ank's a few years back. Plus they lowered the price for me by $50 and shipped it free the same day! Great people to deal with! I then cancelled my order with Amazon. I decided to keep my 30-year-old Kitchenaid stand mixer that does have the heavy-duty metal gearbox and just have it serviced. The grease in the gearbox liquefied over time and really should be changed out every five years (but they don't bother to tell you that in the owner manual). After spending the money on the Ankarsrum and using it many times, I have to say it is far superior in every respect to the new Kitchenaid mixers. I am completely satisfied with the Ank. It is a real workhorse in my kitchen and performs flawlessly. Since I make artesian bread every week, this machine duplicates the kneading that results from hand-kneading the dough compared to the TEARING of the dough hook on my Kitchenaid. The results are much better crumb with the Ank.

Hmm..I still like my Kitchenaid better, but I admit that I have lots more experience with it. I rebuilt the whole gearbox, and it is not plastic..the Ankarsrum is very, very, let me say VERY different in its action, and there’s a big time learning curve. It might be as good or better than Kitchenaid, but..I’m kinda regretting my purchase, I wish I had just bought another Kitchenaid instead, although my rebuilt one is running great, just that since I already spent the money on the Ankarsrum, it’s just sitting in my basement now as a backup..@@peggywinslow408

Hi Eric I have the Kenwood titanium and love it but it’s a real Kenwood. Ken Wood was an engineer who designed the first machine for his wife. I don’t think he built the machines himself but he designed them. He died in 1995 and his family ran the business, not sure for how many years but they eventually sold to Delonghi who produce with the Kenwood name but sub quality materials. I wouldn’t buy the ones they’re making now. I have fibromyalgia and arthritis so my hands and fingers don’t work the way they should. I had several tries at making hi hydration dough by hand, all the top European bakers say it’s the best bread. I couldn’t manage it by hand. The Kenwood could handle dough for one loaf but it takes time and so the dough heats up where it should stay cool. The Ank has the motor below and doesn’t handle the dough the same and it stays cool. I don’t think there is a best mixer. It depends what you want it for. I wouldn’t be without my hand mixer and I have the first food processor made which works better than any other since. The blade sits flat on the bottom and is far more stable but it only takes 8ozs of flour for pastry so I also have a big one. No matter what you buy there will always be one that does certain things better. I’d be in my element in your kitchen, like a kid in a toy shop. I’ve always had at least 2 stand mixers but now even my grandkids are adults so only two of us to cook for and I don’t like cooking diners much.

Alright okay, okay alright, I'll use my Ank tomorrow and make 6 loaves of wheat bread for this insane family o mine. Thank you for the inspiration! Have been hankerin for the ankerin for a while now as I haven't used it in probably a year or so! In the beginning I went nuts and used it for gorgeous artisan breads (learned how to make boules which are lots of fun - you bake them in a Le Creuset round dutch oven...I also used it to mix meat loaf and mashed potatoes. 😆 Oh and cookies! That monster of a mixer will make a HUGE batch (triple?) of oatmeal butterscotch chip pecan cookie dough! OH and I also turned it on its side to make potato pancake batter using one of the meat grinder (?) attachments. That was fun and they were delicious but it's quicker to just use the Breville food processor for grating. Hope you too are staying cozy and safe! Marya

What a good video! I haven't baked bread all summer long, this has inspired me to dust off my Ank and get to work! Your loaves and rolls looked beautiful and I am impressed with the Oster oven. Hi Amy love all your videos. I bought an Ank because I wanted to try high hydration and it takes longer than my other mixers wanted to work. It took a while to get used to as it didn’t work like my other mixers. I use fresh yeast and get the same rise as you did. For some reason it not only rises higher but in about half the time. I haven’t figured out why but as long as it works. I haven’t used the plastic bowl as it sits in the cupboard where my artisan and kenwood live on the work surface. I’d love to have all your machines and gadgets but don’t have the room or an ERIC my husband would have a fit, he thinks I have too many now.

If you have three mixers, you have four too many. LOL. Glad you took the time to figure out the Ank. It does take a bit but is worth it. The Bosch takes some learning too. You can't just follow a simple recipe it seems. But it is a joy to see it work. Now, the Whirlpool Corp. mixers kinda have us scared from time to time. How's your Kenwood holding up? You reserve bread dough just for the Ank, since it won't die?

Actually, bread is quite precise and you can use super precise measurements. The idea that there's a lot of variabilities is a common misconception. There are some good videos about Baker's percentages, but I appreciate the video. I've been curious about the Ank.

Was hoping you would do the 9 loaf test on the Ankarsrum like you did on the Bosch. Have you done the food coloring test in both machines to see really how well the machines knead? I am just finding your videos on these machines. Thanks for sharing.

Yes, it’s an art, but the science of hydration demands you really should weigh, and measure the elements so you know if it’s 70% vs 75% vs 80% hydration. Less guessing equals more consistency. I say “it’s easy to make a fantastic loaf of bread, but it’s not easy to make the same or a consistent loaf of bread, or pizza, etc etc. Like my old French horn teacher in university said,.”we’re looking for a higher and higher level of consistency..”.

Thanks for being reassuring Amy! I had a Bosch for 20 years and Just bought the Ank. I was disappointed with the Ank in trying to follow a recipe for a Brioche bread. It called for 10 minutes of slow mixing with cold butter. The cold butter didnt want to mix with the roller wheel the a lot of the butter pieces wanted to stick to the roller fingers vs mix in the dough. Any suggestions to the recipe and my keep[ing the Ank. Thanks

Hi Amy! One year ago, my third bread machine broke... than I bought a kitchen aid artisan, with the intention of making bread dough... but when I started using it, it just seemed too much work for the machine. I tried to knit it by hand, but it just seemed too much work FOR MEE 😂😂😂. I think I’ll have to buy another bread machine... ankarsrun would be a great buy, but here in Brazil I can’t find it. So I’ll have to buy another bread machine that will break in 2 years (this is how long they last😩)... loved you video!

I'm sorry to hear your bread machines keep breaking. At least you're using it to death. Yes, I'd agree the Artisan may make some bread, but likely will struggle with some. I think we had a video where we were using it (and gave up and just gave the dough ball to the Pro 600, which has a much better designed hook).

Hi Amy, that is one great mixer, I love it. It’s been a while since I’ve made bread, that looks fantastic and the mixer handles the dough pretty good. Is it hard to wash?

I hand washed it. I soaked the dough since we didn't clean it out immediately, and some of it dried a bit. Once soaked, it all came out. We then use Barkeepers Friend on the inside of the bowl (standard of us to do that). It cleaned easy and looks great. I don't want to risk washing any of it in the dishwasher. Cheaper mixers, I have no issue as long as they are stainless or coated (but not burnished, never on those).

its easy. just the bowl and 2 plastic. really I just rinse it with cold water and a dish rag as soon as I finish the dough. cleans easy, ready for next time. don't even use soap or hot water

Just joined your channel after hours of lurking in your channel 😊 BTW... You really should try a lower hydration dough, such as bagel or pretzel. The Ankarsrum can totally handle it, and not bat an eyelash at it😏... Actually, this would be a great test for any of your stand mixers!

I have heard that this mixer can mix a softer dough than is possible in a kitchenaid or Bosch style mixer, so you don't need to add as much flour during mixing and the resulting bread is softer and stays fresh longer. Have you had this experience?

How often do you use the Ankarsrum? I'm fascinated by it, especially since it will do everything a stand mixer will do (and probably better).

I use mine weekly, and do all my bread baking in it. I bought mine twenty years ago, meant to last. For really small jobs I pull out my Bosch Compact that lives in a drawer when not in use. I really did my homework when I bought it and dismissed KA's after lots of research. Very happy!

Hello Amy! I just purchased my new Ankarsrum. I made a dinner roll recipe with 580 grs flour and 260ml milk. Ran it for about 15 min and noticed it got warm at base and on the side of the arm. Is this normal? Please let me know!! I still have amazon 30 day warranty. Thanks a lot!

Fresh yeast is the best. When baking bread I always weight the flour. Cause cups and deciliters are way to unreliable.

Actually it is the opposite - when you use instant yeast, the water must be on the hot side of lukewarm. Around 42 to 45 degrees celsius/107 to 113 degrees fahrenheit. Well, unless you have a completely different instant yeast in America than what we have here. (We have two types of instant yeast, one for sweet dough and one for the rest. Plus fresh yeast of both varieties. We don't have active dry yeast or anything like that). The yeast I currently use is Fermipan instant yeast ordered online. Fermipan does better with hotter water. So if your instant yeast is anything like Fermipan, it needs hotter water (and less sugar, I discovered now. No wonder I got a very slow rise on my sweet buns today. I could not understand why). To use hotter water have been told to me a short while ago by my aunt, but I discovered that it is common knowledge in this country. Nobody told me because they thought I knew already, which I didn't. Well, well, but boy do I get a better rise when I use hotter water than what I'm used to! I'm not sure why instant yeast needs hotter water, but it has something to do with dissolving or activating the yeast. But I do know for sure that I get better results and a more rapid rise now compared to what I used to, and it is because because of the temperature of the water.

Okey, but you got a really good rise anyway, and you got the Ank to actually knead the dough, which is something I find difficult. But I was probably doing it all wrong to begin with. I will try again, and sort of copy your way of doing it. Hopefully I will then get it to knead. It is for sure not as straight forward as the Bosch, and it does make a mess on that arm on top when using the dough hook to knead bigger doughs. It doesn't knead as fast and efficient as the Bosch, but I guess it is not supposed to either. Since I have the Ank available, I do want to try it a little more. I hope I can knead a slightly bigger bread dough with the roller. I'm not a fan of the dough hook, since I have used it quite a lot it in the past to knead my mother's big bread doughs. I don't want to fight with that bread hook and the dough again, I've had enough of that. I do hope they have seriously improved the plastic lid, because on the old Electrolux Assistent, it is the most chemical smelling plastic I have ever encountered. So bad that it is totally useless and can't ever come close to any living things, like bread dough and such.

Your dough looks really, really nice :-) Not stiffer than potter's clay this time, so maybe you should use the Ank instead of your Kitchenaids for bread making in the future ;-)
