One of our local restaurants makes an awesome broccoli salad and we've been trying to deconstruct it. Broccoli chopped into small bits. Sunflower seeds Apple cider vinegar A little sugar A little mayonnaise Perhaps a little lemon juice I thought about adding some diced strawberries. It's really a nice slightly sweet slightly tangy summer salad

used this dressing but with macadamia nut oil instead of olive oil, on a pasta/chicken/red bell pepper / peeled apple, and onions soaked in ACV for my son who has Crohns ulcerative colitis. Had to peel the bell pepper first. Was really good as we are in summer now, and cannot have many of our usual summer foods due to his dietary restrictions. Thank you. I will make your broccoli version for myself. xxx

I tried this and....I am somewhat disappointed. The dressing was brilliant. 10/10 would use again! But the broccoli was...flavorless. It tasted like steamed broccoli. Steaming sucks all the flavor out of broccoli. No matter how well I dry it, it still tastes watery. This salad would be 1000 times better if the broccoli was roasted first. It would also be a nice textural experience as you would get crispy bits. I will be making this salad again but, sour cherries instead of cranberries and roasted broccoli instead of steamed. Thanks for the idea!

what was the point of cutting up the avocado if it was just getting blended in the food processor anyway?
@ZENLADYHila2 жыл бұрын
From a nutritional point of view you don’t need to boil the broccoli because it loses all its nutritional benefits. The Salt added to the water destroys the beneficial enzymes. Better steam for 3-5 minutes lightly or use the broccoli raw. Adding little oil to any sort of base such as homemade raw / vegan mayonnaise or in your case avocado will soften the broccoli and make it delicious crunchy.
