Thank you Amy! That Cheesy Chicken Casserole looks so good!! I will definitely try that! In our family we have a typed up Cookbook. Anytime family gets married we give it to the couple! My husband’s grandmother started her Cookbook, & at first she sold them to the people in her Church and Community. In our family Cookbook we also have recipes of Grandma Collins, and her daughters recipes! We call our cookbook: “The Collins’s Family Cookbook!” Grandma Collins had a “Family Restaurant” type place where you would sit down at a table with other people, usually you don’t know them, and eat ‘family style’ you have one type of food and then big bowls of side dishes are set on each table with a huge platter that held the meat… then you passed it around the table! She did that near Roswell, New Mexico around the 1940’s. Then they moved to Monahans, Texas and opened up a small area and fed lots of families and men that worked in the Oil Fields around about 1945-1955. Then from 1955-1990 she had a ‘Pie Shop,’ built beside her home, where she made her pie dough and she made and sold hand-held pies-Apple, Peach, Pecan, Chocolate, Coconut & Cherry. Then she expanded and started making Fried Burritos, then she started making Sandwiches, such as: Ham & Cheese; Chicken Salad; Egg Salad & Spam Salad!! Grandma Collins was an excellent cook! During that time her grandchildren would drive & deliver her pies, burritos & sandwiches to the area towns! That’s how she raised her six children and her and her husband lived very well! Grandma Collins was a very sweet and loving ‘grandmother!’ She is missed everyday!! Her recipes are very comforting to all of us!! She would’ve been very pleased to know that her great-great-grandchildren (and granddaughters-in -laws) are using and passing her recipes on down to the newer married families!! You won’t be disappointed with the L.G double oven, I’m so happy with it. If I ever needed to bake 9 cakes at one time I could lol. We have gas everything and this double gas oven is wonderful. I can bake or roast and broil at the same time. Big family meals are a breeze.

I fixed this today but for the expense of all the cheeses, I was expecting a bit more flavor. It was very good but not something I would make real often because of the expense of cheese. Thank you for sharing Amy, I'm going to try more of your recipes. P.S. I put some of this caserole in vacuum sealed bags and froze it. It defrost quickly in a bowl of warm water. Nice recipe, great base and potential for versatility for what you have on hand or change it up. Nice tip to use rotisserie chicken, or mashed up cauliflower. Could even throw in some veggies like frozen peas or baby spinach or even some sauteed grape tomatoes.
