Great video tutorial. You can't beat NI Chinese takeaways. I've just made the infused oil to sit overnight. When the paste is finished how long can you store it for? How do you store it?

Thank you. Good to hear that you have started making the oil. Isn’t the smell amazing? Let me know how you got in with the 2nd stage! Don’t forget NOT to leave the pot when you add flour , keep Turing all the time so that it doesn’t stick to the bottom of the pot ! This is the best curry pasted recipe ever . As for storage , you can store it in an airtight container in the fridge for upto 6 months. Maybe around have the time outside of a fridge depending on the environment. Get back to me when you have the 2nd stage done please and let me know how it turned out

The second stage went well. Think I was afraid of a bit the heat because I didn't want it sticking. It didn't turn out as smooth as yours in your video. Finally two days later and made your egg fried rice recipe with your chicken curry recipe. Unreal. Worth the effort and worth the wait. It’s fine in the fridge or outside , doesn’t really matter as the oil in the paste will rise & a layer of oil will cover the top of the paste

Is Rajah Hot Madras Curry Powder better than Eastern Star curry powder?

It’s all down to your personal perference. Chinese take away use Triton Madras curry power. If you are making the curry paste . Aways use mild curry powder . Never use hot curry powder. You can always add some chilli powder when you are changing the paste into a curry sauce. That way it is suitable for everyone .

Yes , you dump the drained the vegetables ! They are only used to season the oil . It’s only the oil that is needed.

Yes you can , although you may have to adjust the amount of flour that you are using . To judge the amount start by adding 600 grams slowly a bit at a time , then keep adding an extra 100 grams at a time . You may have to add up to 1kilo and you will be able to judge the right amount when it has turned into a thick paste
