I appreciate that you gave the weights in grams, so I can scale up to an 8-inch pan. suggestion #1: If you're going to level the cake: instead of leaving the cut-side up, flip it over, so you have that very smooth bottom on top suggestion # 2: place the display plate on the turntable and place the cake on it directly. Place five or six 2-inch strips of paper around the cake around under the edges. Decorate with ganache and crumbs. Remove the strips of paper, and you now have a clean plate. This prevents you from having to remove the decorated cake from the turntable to the display plate.
