There is a thing called Kaymak which I first tried in Turkey with bread and honey. It is essentially clotted cream in rolled up form and is white. After that, I fell in love with clotted cream.

I want to try the oven method too! It probably does use more electricity, but it would be more doable for most people since not everyone owns an Instant Pot!

Why the need to boil first? Can’t you just pour the cream in and hit the yogurt button?

Yogurt gets brought to the start of a boil at the beginning which brings the cultured milk (or in this case, plain cream) to the proper temp to begin its transformation. :)

It can be pasteurized, just not ultra pasteurized! And it might be worth a try if your cream doesn’t have any extra ingredients like gums.
