Yummy. I tried this with a Japanese sweet potato. At first I thought they were a little too sweet and kind of chewy. But then I fried them a little longer. Oh wow. Like dessert. Candy. 🤗

I would just use the Julianne feature on my mandolin, I wouldn't trust myself to not cut my fingers making such fine match stick pieces.

For me no slicing. I just cut the potato into 1” inch cubes. Boiled them for 10 minutes. Then just smashed them flat in the pan. Salt/ pepper. Of course it’s nicer to have the lacey bits on the edges. But smashing them does okay.
