Patrick Egan and Angela Sheppard team up to make some damper.
-The Recipe-
Ingredients:
Self-raising flour
Plain flour
Salt
Olive oil
Water
Technique:
1. Pre-heat oven to 180C
2. Mix together both flours in a bowl -- 2 parts self-raising flour to 1 part plain flour
3. Add a pinch of salt and a little olive oil. (If using 1.5 cups of flour in total, add 1 teaspoon of olive oil). Stir together. The olive oil helps the damper last longer after it is cooked.
4. Add water a bit at a time and mix with fingers till the dough is wet on the inside but dry on the outside.
5. Sprinkle the table with a bit of plain flour, then gather up the dough and place on the table.
6. Form the dough in a nice round shape (dough should hold its shape) and knead gently for about 30 seconds. Don't over-knead as the resulting damper will be tough.
7. Place dough on baking tray and pop tray into the oven for about 30-40mins.
8. Remove from oven when damper has risen and it is crispy to touch on the outside.
9. Cool on wire rack.
10. Enjoy with butter and jam or with stew.
