In this video, I'm going to show how to make Depression Cake (known also as Wacky Cake or War Cake), a cake born during the Great Depression in the United States, in the '30s. This cake recipe is also vegan and very easy to make.
It became famous cause it didn't include any expensive ingredients such as milk, eggs, or butter.
In those times, having a dessert became a luxury, so this cake was born as a cheap alternative to complex cakes.
Seeing we're living difficult times and some families can't afford to buy all kind of ingredients or some don't have the opportunity to go shopping during the lockdown, I have decided to show you my version of Depression Cake with a Twist (an eggless, butterless, milkless and oilless Depression Cake).
Stay safe and use those simple ingredients you have in your own pantry to make great cakes!
Ingredients:
flour 190g.
cocoa powder 35g.
sugar 150g.
baking soda 1 teaspoon
vinegar (or lemon juice) 1 tablespoon
water 235ml.
vanilla extract, orange extract 1 teaspoon (optional)
a handful of nuts (anything you have; preferably salty peanuts) optional
Chocolate cream:
icing sugar 100g.
cocoa powder 25g.
water 2 tablespoons (add more gradually if necessary)
a pinch of salt
Optional: sea salt on top
Instructions:
1. In a bowl, add the flour, sugar, cocoa powder, and salt.
2. In a small glass, add the baking soda and the vinegar. Then add it to the dry ingredients.
3. Add the water and vanilla extract. In the end, if you want, add some nuts you have at home.
4. Bake the cake in the preheated oven at 175°C for 30-35 minutes.
5. Let to cool and prepare the chocolate cream, mixing all the ingredients. If the cream is too dry add gradually a bit more of water (1 teaspoon at a time).
6. Once the cake is ready and cold, add the cream and freeze for 10 minutes.
7. Cut it as you want, sprinkle some sea salt, if you have some, and store it in a fridge storage lid box.
(TIP: If you are that "rich", add a small quantity of salty peanut butter on the top before eating it; it is amazing, I promise you)

You should see me tasting this simple cake with many things, just to figure out which version I like the most. Well, it's amazing with a bit of salty peanut butter. It's also really good with strawberries. But I like it much more with salty peanut butter. I'm trying to revive some simple recipes that people can do with super basic ingredients, during these times and, unfortunately, in the near future! Thank you for being such a great support!

Thank you, Valentina! I also wanted to be a bit different than my own mood and energy of the videos. I'm glad you like it! As for this cake, besides it has very few ingredients, the ingredients used are affordable ingredients that almost anyone can buy or have in their own pantry.

I've been searching for some time to see whether the vinegar can be substituted for lemon juice and found your recipe! Have you tried making it with lemon juice? Is there any difference? All U.S. recipes say "white vinegar" but I'm European and have no idea what that is here... Thank you for the great video! I'll give this cake a try and write back with family "reviews". 😀

Hi! White vinegar is classic vinegar (I'm European, too). I normally use apple vinegar cause it is a bit softer. But absolutely you can use lemon juice. It will make the same effect. Actually, I use it too sometimes. I'm looking forward to your feedback! 🤗🤗🤗🤗

Thank you for your quick and positive reply! 🤗 I have just one more question. Since I don't buy vanilla extract and your recipe says it's optional, can I use it in powder form? There are very little packages of powdered vanilla here (2 grams I think) and I use them for baking sweet temptations. Thanks again and have a great time!

It is really good! And so easy to make! If you have some salty peanut butter, add a small quantity on your piece of cake before serving! It tastes amazing! Also, remember to store it in the fridge!

Can I substitute some of the sugar with an overripe banana?

Hi! I have never tried. I could work and I'm telling you why. The regular recipe has also oil. You could use only half of the quantity of sugar and add the banana for the rest of the quantity. Please let me know how it turned out. Also, use a toothpick to check the cake if it's done. I'm curious!

may I know what was the purpose of that reaction between baking soda and vinegar? i mean we could just add both of them directly to the batter

I choose this method and not just adding the baking soda and vinegar separately in the mixture since this way it can be easier dissolved and will make the cake more spongy. I also noticed the taste of vinegar is way smoother this way.

Hi! I have never baked anything in the microwave, but if you normally bake cakes in the microwave, then it should work this one too. It's not a difficult cake.
