Such a smart idea! We throw away so much stuff without a second thought in this modern world - myself included. I imagine in the past everything would have been preserved, pickled, composted etc. But these days there is more onus on buying things ready made from the store. When in actual fact, it’s perfectly easy and fun to do these things yourself. Thanks for reminding us to utilise our “waste”!

I just dehydrated a bunch of lemons, limes and oranges and made powder out of all of them. It was a sticky job but well worth it in the end.

thanks for the idea. I would like to try it, but I'm curious what you think about using a blender to do the grinding. Do you think it would be bad to use a blender? I powderize my dried herbs that I pick wild while hiking (sage mostly) just by crushing it with my hands but dried lemon peels are much more substantial. I do have a raw foods dehydrator (Sonoma) but my coffee grinder I use for hot chilies and black pepper. I wouldn't want to use it for lemon in addition unless I knew in advance how it will work out. What do you think? Should I attempt to grind it in my blender or must I use my coffee grinder? I don't want to buy another piece of equipment just for powderizing these lemon peels. By the way I might go through a lot more lemons than you :) I probably go through 10 lemons in a week since I'm a mostly raw plant based diet guy and eat mainly salads with olive oil/lemon based dressings.

Yes of course -- if you have a powerful enough blender (like Vitamix) it'll work. A regular blender won't do the job though as dried lemon peels are super hard.

You said to powdered lemon peel in recipes that call for peel or zest; but the ones that call for zest often say to make sure not to get any of the peel because it's bitter. Is there something about the powdering process that makes it okay to use as zest where fresh would not work?

Hi! I don't feel any bitter taste, but it's personal preference -- if one is more sensitive about the taste of pith, one might as well remove it before dehydrating.

@@ladymuck2 Zest is just the yellow bit right at the surface. Peel includes all the white 'pith, going down to the fruit itself. The zest holds nearly all the flavour.

Hi! It’ll take about 36-48 hours at room temperature. So I'm guessing about 24h in warm oven. Just check them -- they have to be thoroughly dried, crisp.

Yes, sunlight is fine! It'll just take a bot more time if it's not very warm.

I do in fact love to juice a batch of lemons and freeze the juice in small portions. It goes bad so quickly in the fridge and because the portions I freeze are small I can thaw them very quickly. Also, I remove the peel with a vegetable peeler and put in a jar with white vinegar, let soak a month or 2 and you have a very powerful (be careful with it, best to dilute) home cleaner that smells fantastic. Your lemon powder is a wonderful idea and so much better than using lemon extract.

Seems so simple and great i zest lemons atm as they add nice ziip to any food! Did on fish but with these new magentic spice jars wehn adding salt it went thru and ruined it lol wish i put viengear or lemon juice on it but jus dealt with it :S oOouh

In my experience it lasts for months in the fridge (given that the peels have been fully dehydrated). You can also store it in freezer if you want to be on the safe side.

Hi! I own a 1000W Kenwood that has a bigger and smaller S-blade processor + glass blender + small glass grinder. It also has a juicer that I never use :-) It has served me well! Make sure the processor is at least 1000W.

Only do this with ORGANIC lemons. Otherwise you will be consuming some rather nasty chemicals!

It’s because the use of pesticides is widespread in citrus fruits production and many chemical substances may be applied in order to control undesirable moulds or insects. It must be remembered, that it’d be mainly the peels of lemons where the pesticide residue is found.
