I love the story of risotto being a combination of riso and otto. I will always stir the rice in a figure eight from now on!

It's a useful tip. Although risotto is far more likely just the word for rice, 'riso', plus the standard suffix 'otto', for 'plump' or 'substantial'. For example, from pane (bread): panino = sandwich bun, pagnotta = bread loaf.

Vicky, you had me at "adds a generous amount of red wine". Beautiful family, recipe, and scenery. This is not a tiny little operation. Unlike North America, we always see these families that work together, live in harmony, and seem to love each other. We all need a little more Italy in this world. Thank you Vicky and the Pasta Grannies team for continuing to excel at everything you do. I wish these episodes were one hour long.

Never seen the combination of rice and chicken in Italy and I'm nearly 50 yo. Now I learnt another recipe. Veneto region is fantastic. By the way, how to confuse Americans, Italy is one of the first rice producers of Europe. We are not only the home country of pasta. 🌾🌾🌾🌾🌾🌾🌾🇮🇹🇮🇹🇮🇹🇮🇹🇮🇹🍲🍲🍲🍲

OK. Sorry. Had to post yet another post. I have now made this 4 times. Each time, I just “eye” everything and everyone LOVES it. The secret is to cover the chicken 1/2 and let it simmer for at least two hours. (It should be falling off the bone). Then Just make Risotto the way she shows you. I have been making it for years and her instructions are perfect. Trust me. Make this and your friends and family will be AMAZED! Thanks so much for this video!

Ms.Vicky, very nice recipe, I saw Lidia Bistanich make this on a food network, she used aborio rice I think, she stirred the rice constantly for 18-20minutes adding the stock a ladle at a time as the rice absorbed it, wow, labor intensive, this pasta Grannies is great, very nice, God bless everyone

hi Steve, arborio is a good risotto rice which needs attention because it can overcook quite quickly. Carnaroli on the other hand is more tolerant and a good variety to choose if you are just a beginner with risotto making. 🙂🌺 best wishes, Vicky

That's the accent of Veneto Region (North East of italy), it's very musical, I love it. To me it's one of the most beautiful accent in Italy.

this reminded me my university days - cooking rice in chicken broth with chicken would keep me fed for the whole week and was cheap too. Of course i did not use wine and rice was a value range :) Still very delicious!

This so delicious. I like to use the chicken bones to make a broth once the chicken is shredded to then use for the rice instead of water.

hi Johnny, I do something similar - make broth from roast chicken bones, use this, the leftover meat, and a few toms to make a risotto; the key is the rosemary, I think. best wishes, Vicky

@@seethoj12 indeed - we eat a lot more chicken than Italians so you'd be hard pressed to find an American calling chicken and rice "trash" food. Hispanics in particular make similar dishes that have become popular outside of their culture, like the famous Cuban arroz con pollo. In all the times I've dined with my relatives in Italy, they have never offered chicken. I only saw it in those little take-out places called rosticcerie, so it would seem that they consider chicken to be pretty humble food that suffices for a fast meal at home. However, I will be the first to say that Italians make a masterpiece of any food, humble or not!

Lovely, & thankfully a far cry from the "risotto" I was introduced to as a child. It was baked rice, usually with peas, onions & cubed spam for some reason. Not saucy at all & drowned in Lea & Perrins. 😆 I really don't know why it was called risotto... but hey it was the 70's. Do love making a proper risotto though, there's a Zen like catharsis about constantly stirring that infinity symbol ∞ into the rice & slowly adding stock. The day's worries evaporate with the steam. Especially good at this time of year if I've been foraging for ceps/penny buns or other wild mushrooms to add to it. Was interesting that they didn't gently fry the rice at the start of the making, I was taught that way. But I suppose if they're leaving part of fibre on the rice it'll give the "nutty" flavour instead? I had a wry smile to myself when the son said he'd even used rose petals to make a risotto before... he's obviously a hit with the ladies! 😄 Lovely family & they live in a stunning setting. So flat, but I suppose it needs to be to flood the fields. Brilliant video, a wee change up from the usual, but just as welcome as risotto is a strong favourite with me. Thank you.

ooh crikey, I was spared that horror! A uniquely British take on risotto and maybe 'Chinese' fried rice... yes it was interesting to see they weren't bothered about frying the rice. I think there must be several homey rice dishes where the 'rules' aren't followed too closely. Also Carnaroli is bomb proof in my experience. 🙂 best wishes, Vicky

There was a lot of questionable food served to us as kids in the 70’s, but it wouldn’t cross our minds to object or it would be waiting for us for breakfast after being sent to bed without dessert, if there was any, because treats weren’t an every day occurrence. I like making risotto Milanese myself but I confess I’ve graduated to using my Instant Pot.

@@mjrussell414 Suppose when you think on it rationing didn't completely end until 1954, so old habits were ingrained into our parents. I've said talking here before how something like a chicken wasn't a regular occurrence & would last a family of four for at least three meals, more if you include the stock from the carcass. Still think it was pretty healthy for us all though. Through simple filling food [mainly soup at least twice a day] we didn't go hungry. Yeah, we just didn't get to leave the table in our house, and a smack round the head wasn't out of the question either 😆. Still never got used to Brussels sprouts though. I still keep trying them & Nope! I felt bad making a risotto in the instant pot at first... & expected it to be awful. But it was actually pretty good & a good cheat if you have other things needing doing.

I am not familiar with Indian rice varieties apart from basmati, which is not suitable. You want a rice with a high starch content that doesn't turn to mush when cooked for 18 minutes or so. I did a quick google and noticed comments which say you can buy arborio in the major supermarkets in India these days. I am sorry I cannot be more helpful. best wishes, Vicky

the liquid she used from the pot on the electric burner to add to the rice is hot water. The right way to add more liquid when cooking something. Never cold or tap water. I always keep the electric kettle on for more hot/warm water. I don't think stock is necessary with the red wine/tomatoes/red sauce ....

Great video, but I have to say that I am a little disappointed by the fact that this one seems to be a bit commercialised in its production.... Respectfully, please, keep the format as you originally intended, getting into grannies and mamas kitchens and filming their true home cooking as it was taught to them by their elders....there's plenty of fancy pots and induction cookers and producers of organic food advertising their unique products, all over YT...thank you.

I'm sorry you didn't enjoy this video - you'll see it has a 'diary' banner as I like to film small agricultural producers occasionally, and we try and link it to a grandmother then using the ingredient (see Samuele the cheese maker from a few weeks ago). On this occasion, the signora cancelled but I like the family love in this video. 🙂🌺 best wishes, Vicky
