Gina I’m middle eastern and I use lamb and cover the meat with oregano salt pepper and onions. I cover it with vegetable oil. I cover it overnight. I use my choice of veggies and I use skewers that are metal with wooden handles. I don’t mix putting meat with veggies. They cook at different times. So I use skewers for all meat and others for veggies. Then I put them in a pot as they cook. I mix all the cooked food and cover. I make a bed of rice pilaf on a plate and spoon the kabob mixture over it. That’s how we Armenians eat shish kabobs.. delicious.
