Ethiopian Injera by Making Spicy 1/2 of cup of warm water 1 table spoon of dry yeast 2 cups of sifted wheat flour 4 cups of teff flour 6 cups of water Process: Add ½ of warm water and 1 table spoon of dry yeast to activate the yeast. Add 2 cups of sifted wheat flour then the 4 cups of daff flour. Add water and mix with a mixer. Leave it to ferment for 3 to 5 days at room temperature.

I have tried injera once in the Ethiopian restaurant in Thailand. They served with two kind of wots, salad, veggies stew and some beef grill. The taste of injera itself was so sour like venigar but when ate with wot or stew it so nice. I was so impressive Ethiopian food but after I finished the food and back to my home, I found I might allergy to something in food cause I have red rash on my skin. I doubt I might allergy to injera which maybe from teff flour or from the fermentation process. So pity me that I will not be able to eat the delicious Ethiopian food again.

You might try making lahhoh with wheat flour and instant yeast. It's true that fermented foods can be high in histamines and cause trouble for some people, or more rarely, you could be sensitive to teff. If you learn to make Somalian lahoh, it's very similar and you could probably ultimately make it with barley or another whole grain. Ethiopian food is the best, I really wish you a way to enjoy it!

It’s best to use 💯 teff for health reasons. I haven’t tried it with rice flour, but I am sure it works.
