How are they cut? Large pieces or finely chopped? If large cuts, may be you can remove them from current solution and ferment them in brine solution. The taste will not be the same as the raw fermented bamboo shoot, it tends to be more pungent and sour in taste.

Yes, it is always fermented before drying. It develops the sour taste.

What color should bamboo shoot powder be? I purchased bamboo powder and the color is green. Is that normal?

No it is not. Where did you purchase it from? Bamboo shoot is creamy white in colour when fresh. If fermented it is dirty white in colour and if dried brown in colour.

Based on the reviews... the powder used to be white, but they changed manufacturer and now it's green. This was my first time purchasing Bamboo. Can you please recommend a good powder brand to me?

👍 👌 ♥ 🍲.. Fermentation process of pickling & Smoking edibles is also very common in Hamburg Germany.. Including the Scandinavian country's.. Particularly fish, vegetables, fruits & also meat. Of course Cheese 🧀, Beer & wine 🍷 is also a part of it. Actually there are many different species of Bamboo. I value North East Indian culture & all the other tribal communities in India.. They treasure knowledge.. Which is way beyond the so called English speaking literate lot roaming around at the shopping 🛒 malls. While toting their smartphone 📱 without any valid clue about their ancestral know how at large.. 😂 Least one shouldn't forget that we all hale from food 🍲 gathering tribal communities.. Ever Since I got my DNA test conducted more avenues has opened up related to my ancestry. Your video 📹 is informative indeed.
