Definitely going to be making some pies this holiday season! Quick question, if we don't have pastry flour, can we use all-purpose but replace some of it with cornstarch or potato starch to lower the amount of gluten formed?

Yes, that can work. AP flour is about 3% higher in protein. Substituting with a bit of starch will help. Happy baking!

That’s the most beautiful pie crust I’ve ever seen. Love how you add the brown sugar to the water and salt. The flour is it regular cake flour? I have some swans cake flour. I would love to try this. I saved this. Thank you for sharing. Have a great day. FW

Thank you! So glad you enjoyed it! Swans cake flour has less protein at 6-8% as opposed to the 10% protein in the flour I used. You can use your flour but substitute a bit for something a little stronger, even if it's all purpose.

You can also substitute with all purpose flour. The texture will not be as tender but still good. Cheers!

Sally! Awesome tutorial on pie dough! Oddly enough, I tried my first pie dough from scratch tonight for a leftover Turkey pot pie. Everything was the same-ish as your recipe except for the sugar of course, and I mixed the salt with the flour before adding my fats and cold water. I really wish I saw this before because my crimping was terrible 😆 your crust turned out beautifully... Cheers!

Such good information here the part about of salt and it’s uses in this recipe was cool to know about how it holds water and making the gluten stretchable. Like you can freeze this dough too for later too, you know me, the less steps the better. Lol That’s a beautiful rope technique- I could never do that well ever in school, actually I failed my practicum on pie dough because I got a crack in my pie dough after I pulled it out of the oven. Great tutorial I loved it chef!

Can you substitute vegan butter or coconut oil instead of butter and shortening?

Try with the vegan butter, I recommend freezing it and grating the butter, then incorporating it in the flour. If you want to use coconut oil I recommend using it in addition to the vegan butter. Happy baking!
