➼ Fougasse bread recipe
Ingredients:
• T65 flour (bread flour): 250 gr
• Salt: 5 gr
• Fresh yeast: 2 gr
• Water (Baseline temperature: 75°C): 150 gr
• Liquid starter: 60 gr
+ water: 10 gr and olive oil: 15 gr
• Optional: herbs, olives, etc.
• Kneading
• Bulk fermentation: 90 min at room temperature + fold
• Fridge: 4°C for 12 h
• Pre-shaping: drop shape
• Rest: about 90 minutes
• Shaping: with a rolling pin
• Baking: 13 min at 250°C.
