Eva, "we don't want to waste any food!" was a lesson I learned from my mother, who lived through the Great Depression.... and... of German ancestry taught me to make potato kugel! Mashed potatoes, cheese, eggs, milk, and if you had it... ham! Amazing how different culture have such similar foods! Happy Thanksgiving, Eva and Harper!

this is possibly my favourite comfort food, I once ate so much of it, I had a stomachace, and as soon as i felt better later that day, I finished the leftovers lol. in my family we stuff it with provolone, mortadella, and salsiccia napoletana ( spicy sausage).

Gateau di patate is a staple in my home! I do cut everything up instead of layering it and I do put some hard boiled eggs also. I love it with the hard boiled eggs! I always put the breadcrumbs, cheese and butter on top also. My mom always made this with our left over mashed potatoes. It’s just so delicious! Hope you guys have a blessed Thanksgiving.❤️

Welcome to Arizona, Ava cooks just like my mother our family was from the same region as Ava's family. My wife is 100% Italian also cooked like Ava ,but she is very I'll now ,so I do all the cooking ,watching you both and using Ava's cooking style has brought much joy to us .We enjoy you both and once again Welcome to Arizona, we moved from New York 25 years ago the best thing we ever did,this state is amazing many adventures. My mother in law made this every holiday. She cut up ham and Genoa salami and of course mozzarella and she used Romano cheese. She also put breadcrumbs on top with butter. So good! Glad I found your videos I love them!

There's a version from Palermo (we call it grattò) stuffed with ragù (can be leftover ragù for the arancine) with hardboiled eggs and provolone. But you can also find the simple version.

Wow ,almost same recipe of my mum except she cubed cheese and salumi! Vegan version: no cheese or meat, just left over trifolati or boiled zucchine/ carrots/ broccoli/mushroom/ peas!! Good ,healthy and svuotafrigo recipe😋

Eva io pure lo faccio, ma taglio il prosciutto il salame la mozzarella o altro salume o formaggio, tutto a pezzetti mescolando tutto per poi metterlo in un contenitore e per poi passarlo al forno dopo aver cosparso tutto con mollica di pane e burro a pezzettini. Complimenti.

What a great dish! I’m going to make it after Thanksgiving with the leftover mashed potatoes, and the rest of the leftovers. Putting stuffing, turkey and corn in the middle like a mini Thanksgiving dinner in every bite! Now I have something different to do with all the leftovers, and cranberry sauce can be the garnish on top. Thank you!

Don't put too much stuff in it, if you want to use leftovers I recommend using just the turkey and adding some cheese, if you have some gravy you can pour it on top once it's on the plate

This channel always cracks me up and I cant really explain why.Its like a serious cooking show yet comes across as a comedy.Harper,you have a charm about you that is kinda blowing my mind. In my mind you lately always come across as "THE" Chef Alfredo....I love that character....and of course Eva is just amazing as Eva. Found it!!! This is one of the awesome dishes my Sicilian grandmother, from Catania, made regularly for Sunday lunch or special occasions. I never knew anyone else who made it and have never seen it on a menu. I feel I've travelled back to my childhood, 50 something years ago. I should have written down her recipes. Interesting how Eva's Calabrese recipes are similar to la mia nonna's. Thank you, thank you, thank you. Mario, Melbourne, Australia.

I made this the other night for dinner. My husband and I had some friends over so I made it for dinner. I used thicker slices of ham and added some American Cheese to it. After I was done eating I went to take a picture for Instagram and tag you in it and it was gone. It was a big hit in my house. It was so good. Love trying your recipies. So glad I found you channel.

@@baconbap Some could call these potato pancakes but my potato pancakes are made with fresh shredded potatoes in a thin flour-like base and then this is fried. Any way you make potatoes they are always winners.

My grandmother's cousin used to make this when I was a little girl. It was so incredibly delicious, but unfortunately the recipe (not that she used one) died with her. Can't wait to try this recipe to see how this compares. Just by her description, it sounds like it is the same as she used to make!😋

So, like a giant baked croquette. Until now I just made balls of left over mashed potatoes, stuffed with cooked ham and cheese, then coat in eggs and bread crumbs and deep fried. I will have to try this recipe!

On Thanksgiving my family just has regular mashed potatoes, but my Italian grandma always uses the leftovers to make little potato cakes. I think hers are just mashed potatoes with egg and breaded with bread crumbs. Ours never had meat, but I need to try this now. 🤯

This dish was fantastic and we live in Marta on lake Bolsena and our area Tuscia has some of the best potatoes anywhere so what a great discovery on a new way to prepare our spuds

In my family we cut the prosciutto, soppressata or whatever we have in little pieces and mix in the potatoes without making layers, so at the end everything is more evenly distributed. Btw, great video 👍👍👍. The "wet hands" part made me literally cry in laughter.😂😂😂

same here, the only thing we layer are slices of boiled eggs, the rest we dice and mix ti up.

I do it like that too, I LOVE speck so I use that (or cut up bacon when I can't find speck -I live abroad-). It's also easier to portion. With whole slices sometimes they don't cut properly and when you lift the portion out the whole thing falls apart

For years I have used cavatappi for my baked macaroni and cheese. I just like how it holds the 4 cheeses and grated smoked ham.

Pastelon de papa. In Puerto Rico we put meat and cheese, Etc and we love. We also have pastelon de amarillos, where the potatoes are replaced by fried sweet plantain. Mmmmmm. I want to do this one now!!!
