I have seen automated bakeries making filo, and they are certainly more productive but the skills of this family are born in love of their craft. Machines don’t imbue a whole lot of love; they are just more productive.

In a world that is technologically changing so rapidly, the Covid crisis that put many old businesses out and with the malaise that seems to be ever looming over everyone’s heads politically, I’m noticing that people are forgetting past histories or never learning them- the people, culture and skills/traditions - and by doing this, not only are uninformed people buying into ‘anything’ they are also missing out on rich culture, wonderful skills that people knew/know (like in this amazing documentary) and valuable lessons that we don’t want to repeat. Several things stood out to me in this wonderful video, but I loved that there were older people sharing their skills that they were proud of. They were working and had a ‘purpose’. That is so valuable to the family unit and why people go on living longer- there were many lessons to be gained from the video - making the most from whatever job you have and doing it to the best of your ability. I was just thinking nothing he did was ‘fast’- it took effort and it was a ‘process’. All good lessons and many that kids are very much missing out on today. I connected to the video because my grandmother taught me many things growing up- I loved her very much. She taught me my first cooking lessons right from the garden that we planted. Nothing was rushed and I always cleaned up after myself. I found that there is a process to everything. Her words of wisdom still ring in my ears today. I feel that our shortcomings as a society are directly related to the disconnect in family life so when I saw this it reminded me of my grandma- she had so much to offer no matter her age. Wow!!! I met this man years ago in a trip to Crete! He's still working..! His laboratory was in a beautiful ancient Venetian house - Crete is been a Venetian harbour for centuries, many houses are in Venetian style - and he left me look and take pictures about his amazing work with giant sheets of fillo paste!!! Though he didn't speak much on his family, his love for them and his values were the things that came through the most. He really radiated kindness and goodness. What a beautiful film! He reminds me of my grandmother…she made the most amazing food by how it felt, tasted, and looked. And after making things thousands of times she just knew when it was right. I saw much of her in this man. Sadly we did not learn her skills and they have been lost. How amazing that three generations of this family are keeping this tradition and skill alive. He was so handsome as a young man and what an amazing life he has led yet he stays humble and grounded. If only more of the people in this world lived so well. ❤

These sweets derive from populations that lived for millennia in cities. They aren’t recipes of nomads. Nomads as people of livestock and shepherds are excellent in the cooking of meat and in the production of cheese and yogurt. Turkic tribes came relatively recently in the Mediterranean as nomads, wonderers. They came without an alphabet or agricultural knowledge, they came as paganists/shamanists and coming towards the Byzantine Greeks of Asia Minor they stopped to say hello to the poor Persians who were butchered mercilessly(nomads know how to butcher brilliantly because they are shepherds). The encounter with the Persians and the Arabians, civilised the turkic tribes a bit. It gave them the Arabic writing and Allah as their god. Also many recipes of the people of the primordial empires of the middle and near east were appropriated by the audacious newcomers. This audacity continues today. We are all sons and daughters of nomads but the most recent in the Mediterranean are the turks. So the least that they can do, is to search in the terrabytes of books, scrolls, instructions and traditions that the previous civilisations left behind to find that the foods (savoury and sweets) that they think as turkish are actually recipes of the people that lived upon the lands that they conquered. You took the best part of the greek world. You live upon it. You make billions from the monuments that these people left behind (temples, ancient cities, pottery, statues, gold, ivory, churches, monasteries, picturesque villages etc) and you have the audacity to claim that you have a national character and psyche. Show some respect to the spirits of the people that you erased from the face of this world and study their traditions. It’s what makes you wealthy and important today.

Osmanlı İmparatorluğu, Arabistan'ın önemli bir kısmını da kapsamakta olup Arab Yarımadası'nda ve Kızıldeniz kıyı bölgelerinde etkili bir varlığa sahipti. Kuzey Afrika'da ise imparatorluk Cezayir, Tunus ve Mısır'ın bazı bölgelerini kontrol altında tutmaktaydı. Ancak, yüzyıllar boyunca Osmanlı İmparatorluğu savaşlar, antlaşmalar ve jeopolitik değişiklikler nedeniyle sınırlarında dalgalanmalar yaşamıştır. 19. yüzyılda, dış baskılar ve iç ulusal hareketler nedeniyle genişleme süreci kademeli olarak daralmaya başlamıştır. Birinci Dünya Savaşı'nın sonunda, Osmanlı İmparatorluğu'nun sınırları Sevr Antlaşması (1920) ve ardından Lozan Antlaşması (1923) ile drastik bir şekilde küçülmüş, imparatorluğun sonunu getirerek Türkiye Cumhuriyeti'nin kuruluşunu işaret etmiştir. Hala baklava ve kantaifi'nin sadece Türk özel bir şey olduğuna, sadece Türkiye'de yaratıldığına, sadece Türkiye'de yenildiğine, sadece Türk mülkiyetinde olduğuna ve sadece Türk kültürüne ait olduğuna mı inanıyorsun? Baklava ve kantaifi gibi gıdaların kökenleri genellikle birkaç kültür arasında paylaşılır ve etkileşim içindedir. Bu tatlılar, Osmanlı İmparatorluğu'nun zengin mutfak geleneğinde şekillenmiştir ve zamanla farklı coğrafyalara yayılmıştır. Birçok yiyecek gibi, baklava ve kantaifi de zaman içinde çeşitli kültürler tarafından benimsenmiş ve özümsenmiştir. Thank you soooo much for this! I have wondered for a long time how phyllo pastry was made! I now have the answer. It is a tradition in my family to get together to make Baklava every Christmas to give as a gift to emergency first responders to thank them for their service. We have done this for over 30 years. We are not Greek but the sweetness of the pastry is a reminder that giving of our talents and kindness sweetens our thoughts towards others, unleashing compassion and gentleness. Crafting of sweet food is a generational delicate form of love. I pray this also helps others viewing this recognize the importance of the lesson intricately woven throughout this film: family ties, shared talents, traditions and willingness to learn is what keeps families together. There is a sense of pride of work as well as legacy here that is missing in our society. May this film bless others.

I think this is the best gift a son can do to a father. the acknowledge and the appreciation for the gift received on learning directly from him. Seen these kinds of craftsmanship disappearing is really a pain to the hearth. It is what we are and what we have been. When these skills will be gone we won't be the same anymore.
