Thank you for a very understanding on how to make hot sauce in a simple way. Now that they are bottled up do, they have to go in the fridge? are the peppers all done fermenting without heating the sauce up? Thanks again and i'm a subscriber now!

Thanks for watching and subscribing!! Everything I’ve read says it’s shelf stable and does not need to be refrigerated but it will continue to ferment at room temperature in the bottle. I do keep mine in the refrigerator and it almost completely stops the fermentation and the flavor stays consistent. I’ve got some peppers ready for another batch now and I’m going to try roasting some garlic and mixing in for a roasted garlic hot sauce so look for that in a few days. Thank you. Hopefully it was helpful. I Was worried the first year I tried it but it’s pretty easy. Make sure you use distilled water and not tap water. I ruined the first batch last year lol

If you’re fermenting a lot and you know it will take “some time” to consume the finished sauce, would you heat the finished sauce to stop the ferment?

@@JMK15 you could heat the sauce to stop the fermentation if you want to. I’ve seen some videos where people do that. By heating the sauce it also kills the probiotic benefits of the fermentation. I do keep mine in the refrigerator and it slows the fermentation almost to a stop and I’ve kept it for up to a year and it is still delicious. Thanks for watching

Cowhorn peppers. I believe I got these ones from totally tomatoes but lots of other places carry them as well
