I have only enjoyed bread from three bakeries so far in my entire life, a milk bread I ate in Kano, a brown bread I had in Abuja or Port Harcourt - I can't remember what state it was exactly but I know for a fact it was made with cocoa powder and was considered a chocolate bread. In my recipe, I have replaced cocoa powder for soya flour to bake a high protein bread that will make my gut happy. I am also using margarine in this recipe instead of butter because that is what most Lagos bakers use for agege bread, as butter is quite expensive. The nutmeg called for in this recipe is simply for fragrance and is optional.
BREAD RECIPE: 🍞
⇢ 2 cups of all purpose flour
⇢ 1 cup of white wheat flour
⇢ 1 cup of soyabeans flour ( not soya powder)
⇢ 1 1/2 cup of cold milk
⇢ 1/2 cup of sugar
⇢ 2 eggs
⇢ 30g of melted margarine
⇢ 1/4 tsp nutmeg
⇢ 1/4 tsp salt
⇢ 2 tbsp instant dry yeast
LOAF PAN SIZE ⏲️
⇢ 9" x 5"
METHOD 📜
⇢ Mix all dry ingredients together
⇢ Melt margarine, add cold milk to cool
⇢ Add sugar, instant dry yeast and eggs
⇢ Add flour and pound for 5 minutes or
⇢ Knead or use a mixer on low for 8 mins
⇢ Proof dough for an hour, Preheat oven for 2 mins
⇢ Proof a second time for another hour
⇢ Brush top with milk and toss in the oven at
⇢ 180°C for 20 mins only
⇢ Let it cool for 30 mins to an hour and enjoy.
