I stumbled upon your videos and just subscribed. I am an Executive Chef for a resort in Texas. I make sweet potato pie and find that letting it sit for the 2 hours you said really makes a difference in texture because it continues to bake as it cools. All custard type pies will. I made your Carrott Cake and loved it, then made it again but added coconut and chopped marachino cherries to it as well. I have subscribe to soulful T and I watch her all the time and I love watching her but when you are doing a presentation u have to make it attractive and that pie pan did not give it a good look now what u do in private is your business but when you presenting something to the public especially food u have to be on point. SuthenGirl. They probably would change her..to follow a script. If anything, I'm praying she could have some sponsor's contact her, give her all the pots. pans and baking dishes she needs for life, a new house with a great huge kitchen with an island to store her bake wate right behind the doors so she could grab what she needed plus the hand appliances right there stored underneath, but right there. I have a lot more to ask for. Local chain grocer to call her in to say "heyMiss Soulful T since you are filming on Tuesdays, come on in Monday, and get what you need for Tuesday". let us film you each week to put up a loop style add that runs every hour." That way she would always have all have her food prepped, not ever run out of stuff like powdered and granulated sugar again. I'm really glad she is doing this new adventure and making it grow. New video every Tuesday. Different page for her couch talks. "hah!!The couch talks with Sunglasses, camera from across the room, that little camera angle for reasons there of ...so dang funny." Ok, gotta go and heat up some leftovers. Miss Soulful T! Do you have anything you cook for your mom as a single person that has the beauty you share for a family size? P.S. I have some tried and true mists to say so you don't launch your condo into heaven!! Please, Pam Spray, any time you use it, spray it over the kitchen sink for 2 BIG reasons..1. it's highly flammable like any element that is a spray. A flame would shoot up face high, burn you and your hair terribly, then burn your son who's camera man, then flash start everything in fire's path. #2, as you Pam spray, it leaves an oily surface . Ooops, there you step slide down to floors , break your head or hip. have to leave your boys, while you spend months in rehab. Also, we have Dollar Tree stores in Oregon. Aluminum bakeware comess in 3 pack 8" size, 2pack with 9" size, and anything bigger like roaster or keep the oven floor clean sheet. I keep a supply of those on hand for potluck parties, leave,a meal for family in grief, illness or new baby meals. I don't want to be upset ever again when I don't have the baking dishes returned when I need them next. If I'm making a take out dish, I go to the $$ Dollar Tree

Baking the sweet potatoes really made a BIG difference..I wanted to try my luck with making this crust b4 thanksgiving, so i made a "test pie" ....the potatoes carmelized and the natural sugars came out...NO more boiling them for me! The crust was tender and flaky, and buttery....i even ate the side piece of crust that everybody usually throw away....lol..Great tip about baking the potatoes. I am also hoping to see a TOWERING coconut cake for Christmas!...I like a lemon type filling..PLEASE!.....lol...tons and tons of freshly grated and toasted coconut allover the cake (reminds me of fresh fallen snow)!!!! My lawd!!!

Or are you saying put them on top of the crust edge? ..either one sound good to me.....never thought of that...putting them around the edge would be so festive and pretty. Shelly Lanette ..lollollollol! ...No honey, they will know I ain't NO pro---- just by looking at the crust! lollol...*BUT*, it will sure taste good!....I'm gonna add some crushed up pecans to the dough AFTER I roll it out and put it in my pie pan ....I'm gonna smash em right in the dough b4 I put my potato filling in.....that's gonna be good! These pecans I got is so fresh and crunchy from the shell, so I won't be toasting nothing. .right straight in the pie and into the oven and into my mouth! queeniknowhoiam Oh that sounds soooo goood! My Granny used to swear by using oil in her crust...I think she learned how to make it that way because it was easier and probably cheaper. I only like the taste of that for her mince pie, though. As much as I'd love to mix it up like Tanya does here with her hands, I know it will never work cuz my mits are always too hot. So, my trick to dough like a pro is to freeze the butter whole and then use a graterw large holes to grate it into the flour, and use water from a glass of ice water. Later on I learned that letting it rest as Tanya does is not a step to skip, it really helps to sort of hydrate the flour more evenly so that your crust will be way easier to work with and is less likely to tear when you roll it out. Anyway, you sound like you cook w love so any way it looks I know yours will be good! 💓💓💓

I order vanilla beans from Ebay, buy a fifth of cheap vodka and make my vanilla at home. It's better than store bought and way way cheaper. You might want to check that out since you bake a lot.

All other homemade crusts that I’ve seen demonstrated were done perfectly so when I tried mine, it was a panic for me dealing with the breaks but no sweat for you, you just fixed it while in the pan! This is awesome, I didnt learn how to make crust until I was like 28. one secret I was told is that the pie crust dough loves cold. so after you make it put it in the refrigerator or freezer for a few minutes will help if you maybe handled it too much.

Hi Ms.T...your sweet potato pie looks delicious and festive for Thanksgivig! You made making the crust look easy.....perfect. When you do your pies I wouldn't mind seeing you make a Pecan...an Apple and a coconut custard (in addition to sweet potato pies)....those are the ones I usually serve to family on Turkey Day...would love to see you do a beautiful golden corn bread and dinner rolls too for the dinner table, and yessssss, I agree with you....pies, pies and more pies are for Thanksgiving desserts...LOVE pies on the Thanksgiving dinner table... I definitely agree with baking the sweet potatoes over boiling them. It's a distinguishable difference in the structure of the custard. It grabs hold of the ingredients better and tastes more robust. Try both ways and decide for yourself.
