Just made this yesterday. Thank you for giving a recipe that can be used in the 13" Pullman pan. This was my first time using hard red wheat berries. I have them so that is what I used! I use Pullman loaves now as my main and usually only bread as there is only me and I use only 1 slice in the morning for my breakfast egg. I slice and freeze my loaves and take one out every morning. I added 3 tsp cinnamon and 3 cups of raisins. It took much longer to rise in the pan and to bake than your recipe but yummy and I'll continue with this one and try the brioche one as well. It takes forever to grind the flour with the Kitchen Aid attachment but it works!

The equipment in this video is AWESOME. But for those like me that don't have the ability to afford them even by tightening their belts, I'm sharing what I got. My less expensive and WONDERFUL investment was put in the Wondermill grain mill. It's an impact mill and I LOVE it. It can be got for $300 new (or for less if you buy refurbished) and although it is not the cool "stone mill" type or decorative to look at, I expect it to last pretty much forever! My less-expensive mixer is also powerful with a motor on the bottom: the Nutrimill Artiste. It is (from what I understand) not so great for things OTHER than kneading whole grain fresh-milled dough, but that is basically all I use it for. I hate kneading by hand and being over 70 I get way too tired especially with whole grain dough, and the Artiste has been a real lifesaver for me. I was able to get it for less than $200 during Black Friday in 2023. A real game changer too! It's made by the same people that make the Bosch in this video but the bottom of the line. It's a GREAT line, though, and is a real workhorse for those of us on a tighter budget. This home-milled whole-grain bread is TOTALLY WORTH IT for you and your family...!!!

It's After 11pm in Florida and I Just used my Wondermill Mill as well.. started/now rising Dough for Sandwich loaf, and Xtra Flour for Banana Bread in am.. I read Soo many posts about ppl getting the Grit from Stone mills in their Food so Knew I needed simple... I did Splurge and get an Open Box Ankarsrum 2 yrs ago from Breadbeckers for $550. But Lately I'm doing a More Rustic/easier for Me loafs and Mostly No Kneading, it Eats the same so I'm good.. not trying to Win any Contests for pretty..

That's interesting. I had not heard about the grit, but Sue Becker talked about someone, I think a relative of hers, who had a mill that used the stones and after some time it collected bugs! Anyone with a stone mill needs to clean very regularly I think, at least if they live in areas with lots of bugs.@@judywhite7782

Great video! My bosch is coming in a couple days but the KoMo is a month out 😕. I have an older hand-me-down mill from my dad which is an event to use with the cleaning and such, which is why it doesn't get used very much. I have the Pullman pan and hope the recipe works well with the lid because it's supposed to make the crumb better for sandwiches. I loved your tips as well

Last night I made this recipe for 1 loaf of bread and 6 large rolls. They came out so wonderful! Will add this to my recipes. I did not have Vit C so instead of 1 tsp gluten I added 2 tsp Vital wheat gluten - no Lecithin either - so I just skipped it. It was light, soft, and perfectly delicious! Thank you for your video and recipe.

Oh my goodness, I just made my first loaf of bread from freshly ground flour! Thank you so much for the tutorial and recipe! I bought the pan last night. I think it made a difference. I wish I could add a picture of it but I have no idea how to do that! And I loved the "stretch test" and tip to use a meat thermometer! Best half hour spent. Truly grateful! 🌻

Recipe I’ve been using very similar. I’ve never had a problem with my kitchen aid keeping up as your not suppose to knead past #2.

Yes, I always used 2. I upgraded since I was making double batches and it would get very hot with that. I never had my KitchenAid not work I just didn't want to ruin that beautiful thing with long-term bread making. :)

This is similar to Sue Becker's recipe then with the lecithin and Vit C? That was a beautiful loaf in the pullman pan. I have a bamboo slicer, which I've never used, but have never thought about using an electric slicer. That did a great job,and I might need to consider that. You were a little hard to hear in some places in the video... speak right up!

Yes, I made this bread after trying so many recipes and this bread recipe is right on. It is totally healthy, and the texture is just like white bread. I did sift my flour after grinding it to make it a little more like an all-purpose flour. It was awesome. Can you tell me if it will work with the hard red wheat berries?

I followed this link from someone in one of the Facebook groups I'm in. So glad I did! I learned a lot watching this video! It always bothered me to put flour on the counter when kneading it. The oil makes sense! I'm also ordering the storage container the large pullman bread pan, and the lecithin. I already use gluten. Oh, can you please tell me why you don't use the lid when you bake your bread in your Pullman pan? The loaf turns out awesome, but I only use half milled and half AP flour because I haven't liked the texture of all red wheat berry -milled.

@Fresh Milled Mama - yes.. the Pans are 1lb or 2lb.. and we weigh the dough at 1 or 2 lbs depending on which pan is used. That's why you'll see some Recipes State 1, 1.5 or 2lb loafs, telling us which size would work best without excessive overflow. This is for Any type of pan/vessel used to bake the bread.

The 2lb. one I ordered did not come with a lid. I have a couple of the 1lb. Pullman loaf pans that have lids, but I've never used the lids. I'm nervous that I'll have too much dough and it will explode out. 🤣 Any tips? I really enjoy making bread, too. It's super satisfying!

Thank you! It lasts about a week. Towards the end of the week it may start to smell earthy. I also store it out of direction sunlight on the counter so it doesn't condensate.

You could use less sunflower lecithin or leave it out altogether and see how you like it.

Hi! Thank you so much for your video! What do you do if your loaf continually doesn’t show 190 degrees? I kept putting it back in for 5 minutes. I had the bread in oven for probably 45 minutes. Is there something I did wrong or do I need to increase the oven temp? Thanks!

That's interesting. Maybe your oven temperature is off? If it's not burning then I don't see a problem with putting it back in until your loaf reaches 190. Maybe get a thermometer that you can set in and see if your oven is running at 375 degrees Fahrenheit.

It doesn't automatically tell you. You learn by seeing how it pulls off the edges and such. :)

When I ordered mine they actually didn't come with a lid. I have 2 smaller pullman loaf pans with a lid. I haven't used the lids, though, because we enjoy the size and shape without the lid.
