I think I had a religious experience after the first one, 😇😂and then you started playing the “heavens open up” music for the last one and I knew heaven was just getting better and better 😂. I absolutely love a thick pasta. ❤️These remind me of dumplings and I love dumplings. ❤. Now I need to go watch the video and make ricotta 😂. Lord my “want to” and my “ can do” just don’t understand each other at all 😂. Same with the grocery shopper me and the cook me😂. I These look sooooo good!! I’ve made a few of your recipes and they are always amazing. I can’t wait to get my book!! ❤ I am definitely trying at least one of these!! I love Sunday mornings with you guys! ❤ My dad was from Centrache, was Chef here in the states for 50 years, had many fans and devoted "eaters" of his food. Many of the dishes you make, were staples for me growing up, including some of these. You're videos reminded me that I need to continue the traditions. I hope to be able to go on one of your trips sometime. But until that day, mangia, mangia!! And thank you for the wonderful reminders.

Hi Guys~ my Mom would make the first pasta, too. (May she rest in peace🙏) Hers were traditional Gnocchi size. She served them with simple tomato sauce. I've made them, but it's been years. If I do a Family Dinner, I tend to make Manicotti, my great-grandson's favorite. Love watching this channel. Brings back wonderful family memories! 🙋

Pick up those bones and gnaw on them, lick the plates and bowls, whatever you want. Thanks for the behind the scenes peek. No measurements and that is simply how some things are done. The first time I made fresh egg pasta, I asked my grandmother how much flour to put in, she said, "until it feels like pasta dough." LOL

There are things in the kitchen that don't need measurements. All it takes is practice. Those who have no practice in cooking, try to measure everything. On the other hand, those who have experience, don't use scales, don't measure anything. :) All it takes is eyes, sensitivity in the hands and some common sense.

Similar experience asking my Sicilian aunt how to cook. No recipes, no measurements. “Now you add the flour.” “How much flour zia?” “Just enough.” “How much is just enough?” “Not too much.” “Ok. But how many cups?” “How should I know! Get a cup and put in flour with it if you want to. Stop when there’s enough. You ask too many questions. Just do what I do.”

Please do not boot me from the Pasta Grammar Club. I'm living in Abruzzo from Texas, and had some zucchini our neighbors gave us from their garden, so I made Rabutan with grated salted zucchini that I pressed the water from. I did not drain the ricotta overnight, but scraped it from the dry top. I used some Abruzzo Caccio cavalo cheese; did not have any parmesan. I didn't have enough bread crumbs, so I subsidized with a little flour. We do not have an oven because we haven't remodeled the kitchen yet, so, after I poached them, I rolled the dumplings in flour and fried them in olive oil, and put some pomodori that our neighbors made on top. Thanks for the recipe, it came out great.....can not wait to make it the right way!

Zia Maria taught me to make ndunderi. We made them smaller, though. Maybe two-thirds that size. She was 4’10 (147cm) and I was 8 years old, so our hands were smaller. Omg I love Eva licking the plate! That is something I do at home when something I have fixed is excellent and I just can’t waste the sauce but don’t have bread mop it up with. Just watching this video I could taste the sauce my Uncle Mario used to make just for us kids during the summer for this pasta. Il rabatòn era un parte di uno dei miei pasti preferiti nella mia vita. Ho scoperto una trattoria semplice in Murazzano quando ho fatto un giro delle Langhe. Tutto era classicamente piemontese (langhese?). I salumi casalinghi, un po’ di vitello tonnato, un formaggio (Murazzano DOP), ed una crocchetta verde per gli antipasti e gli agnolotti del plin per il primo. Tutto con un bicchiere del Barbaresco. Ho scoperto che la crocchetta era il rabatòn. Il pasto costava meno di 20 euro. Era una dei preferiti perché era completamente semplice, inaspettato, e perfetto. Le sorprese come queste sono il motivo per cui amo viaggiare in Italia.
