We call it kumpir in Turkiye. But when you take it out of the oven, while it is hot, you puree the inside by adding butter, salt and melted cheese. You add the other ingredients later. Definitely try this, you will love it. It is so delicious that we even eat the shells :)

In Turkey there is a dish called "kumpir" which is kind of similar to that but with different toppings and before adding the toppings they mix the potatoes with butter and cheese while it's hot.
