Coming late to the party. The marinated fish looks very tasty. However, I cannot resist but add a few observations and am trying to be constructive with them. The fish is mackerel which for some reason is called salmon by some Ghanaians. In regards to the pronunciation the 'L' is without a stress and more or less becomes silent so it is pronounced 'samon'. When it was said "we are going to marinate Simon", I became a bit worried. It is also important, when possible to get the names of items correct, maybe not so much here as even someone who doesn't know their fish could discern between salmon (pronounced Samon) and mackerel by sight. But let us say it was other ingredients like molasses and asafoetida resin and the recipe required a cup full of molasses but the presenter said add a cupful of asafoetida resin, mmmmm??? I suppose it is quite enigmatic that in Ghanaian English we replace one English word with another. Other examples are calling leopards, tigers or monitor lizards alligators. The odd thing is; salmon, tigers and alligators all don't occur as species in Ghana but mackerel, leopards and monitor lizards do. And back to food and this one actually irks me a bit, calling mpɔtɔmpɔtɔ, porridge. It should actually be yam/cocoyam pottage.
