They look great chef. I make croissants at home every few weeks and freeze them after rolling. Proof overnight at room temp and ready for breakfast. Had to proof my last batch over 16 hours because of the terrible English weather

That dough looked so beautiful when you pulled it out of the mixer and got it ready to rest! I think “supple” is the word. I am so glad you are back to baking in your shop on YT. The finished products looked amazing. I would ❤ for you to make kouign amman one day. I think it is the best pastry-certainly my favorite.

Beautiful looking dough, and an amazing amount of work and time put into the making of these little gems. I am sure they are very popular and sell very quickly. Would really love to buy some and hope they are available when/if I finally get down to your shop. Perhaps I could order some and you could ship them to me???
