How to make meatball soup, step by step recipe
Ingredients and recipe:
Onion - 1 piece
Carrots - 2 pieces
Parsnip - 1 piece
Parsley root - 1 piece
Tomatoes - 1 piece
Vegetable oil - 2 tablespoons
Salt - 1 teaspoon
Chop the vegetables as in the video and saute them with 2 tablespoons of vegetable oil for 5-6 minutes to develop their flavors.
Add salt and 2 liters of water.
Let it boil for about 15 minutes, while the meatballs are being prepared.
350 grams of minced meat with 1/2 onion
40 grams of rice
1 egg
Parsley
Salt - 3/4 tsp
Pepper - 1/2 tsp
Place the washed, scalded and well-drained rice, egg, parsley, salt and pepper on top of the minced meat. Add 2-3 tablespoons of water and mix the composition very well.
Meatballs are formed with the palms wetted with cold water. They are given a round shape and placed on a plate also sprinkled with water.
Bell pepper - 1 piece - diced
Borscht - 400 milliliters
Tomato paste - 2 tablespoons

Place the meatballs in the boiling soup. After 30 minutes, add the bell pepper and the tomato paste diluted with a little water and cook for another 10 minutes.
Add the pre-boiled borscht, salt if needed and boil for another 2-3 minutes. Sauerkraut juice or lemon juice can be used instead of borscht.
Add lovage or chopped green parsley and the soup is ready!
