Just cooked this today for the xmas table. Flavoured half of it with peppermint essense, and the other half with rose water. So delicious. Turned out perfect.

Thank you Georgia for this wonderful recipe. I made it last night for the very first time and it came out beautiful. I didn't have a scale to weigh eggs and sugar. So I used two egg whites and half cup of sugar. Since we don't get castor sugar easily in the US, I pulsed granulated sugar in the food processor and not too fine. Baked mine for hour and 15 mins at 200 degrees. Came out looking shiny and striped in colors and no cracks either!!!! I am so thrilled, thank you!!!

I was going to ask about the sugar too, since I'm in the U.S. i guess granulated will have to do. Also, if i want to color the whole thing, can i add gel color before i start whisking them?

I've been sick of every time I try meringue recipe's they never turn out as they should UNTIL NOW!! This recipe works perfect for me I even made mini toffee pavalova's with it as I'm a toffee/caramel addict they we're lovely so I'll b defo trying some of your other recipe's love u lots ur a sweet girl xx

Same as someone below. My meringue didn't bulk up after putting it over the hot bath. So I just did the traditional way of beating the eggs first then adding the sugar. They did turn out beautiful in the end!

Georgia, I tried to make these today but couldn’t get the meringue mixture stiff enough,I even used a little lemon juice on paper towel to clean my mixer and whisk so there were no traces of oil. I wondered if once I’d mixed the whites with the sugar over hot water, should I have let it go cold again before whisking? Can you help please

You could try letting them cool down in the oven instead of bringing them out straight away, it is known that the shock of the room temperature to the oven can cause meringues to crack x

Granulated works but takes longer to melt and runs the risk of the sugar melting in the oven causing cracks..

Hi, Georgia. This is first time I tried the Swiss meringue method, I tried french and it was unsuccessful. I follow your recipe and method to the T, but I had to bake for about 4 hours because my oven is not hot enough??? Also, my meringue kisses look matte on the outside and not shiny and glossy like yours. Please advice what I could do to make them shiny?

Every oven work differently - I would advise getting an oven thermometer to make sure it's 100°C

Granulated will also work but make sure the sugar is completely dissolved - you may need to heat it to 65 degrees just to make sure!
