Hi! I have a question regarding the texture of the lort. I have made plenty with different types of flour and none is "svet" enough. They always turn out too soft for my taste. How is the texture for your mom's recipe? Btw, I am a big fan of hers.

Thats hard to answer. What I may consider a good texture may not be good to you. All I can say is that I like it. If you really want to find out, you'll eventually have to try it for yourself.

@kaitlyne77, I tend to like my lort on the "svet" side also. One way I've made it is by two to four ingredients: rice flour, hot water, and/or food coloring, and/or pandan extract. What you need to do is put the rice flour in a bowl and add hot water to it, little by little, just so you can get it wet enough to have it form into a dough, it can get very sticky, so I would reserve some flour to be able to work with it with your hands and such. As the dough forms, powder it with rice flour to have it really "floured" enough, so as you shape it into a lort shape, they won't stick together. (Oh, you should add the food coloring or pandan extract when you add in the water little by little). You MUST work quickly, I like to shape my lort into little balls, but if you prefer the traditional shape, simply take a piece of dough and pinch it and start to stretch what you have pinched out until it breaks. If you can, get some help so that the dough doesn't harden or dry out as you work. Before all of this, I would put some water in a pot and boil it. When you're done, put the lort in the water and have it boil, while stirring occasionally because lort sticks EVERYWHERE in the pot, especially the bottom, sometimes causing it to burn the whole pot and ruin the batch. This does take a while to cook. While it's cooking, I would get a bowl and fill it with ice water with enough room for me to put in a strainer also. Take the lort out and strain it and quickly put it in the ice bowl. Mix it with the palm sugar syrup and coconut milk and hopefully it will be a "svet" enough lort for you.

Lotus Koi 1tbsp. Use a lot of water up to 9 cups or more. Then strain and leave no pieces of the white lime in the liquid.

Please tell us the exact strained lime water to make this cendol. As you know, everyone will get a different measurement after straining. If not getting exact measurement, our cendol will either become too soft or too hard. Please reply as I am sure all viewers are interested in knowing. Thank you.
