Dear Helen, I tried this recipe and it’s fantastic as usual. (HIGHLY RECOMMEND!!!) I grew up with pateso and I sort of know what it meant to taste like. This recipe is just like bakery quality. The flavor is simple yet genuine. -Pork mince blended with the pate enhances the meaty taste -onion gives it a great sweet and refreshing “gas” flavor lingers in the mouth -black pepper brings the warmth to it and support the meaty taste too -I brushed “whole egg” and it looks and tastes as good as “egg yolk only”. For some reason, brushed egg makes the pastry tastes like ‘seasoned’ lol Totally it’s very amazing. Golden brown crispy shell and flavorsome succulent filling.

this is great,i can see doing this technique for many things. i do suggest that when you cut the pastry into different shapes, that you do the two that are going to be on top of each other at the same time. that way they will match. of course put wax paper between them. good luck!

Egg wash is a technical term used in baking!! Usually egg yolk combine w milk and then can be usef to give the shiny yeloow color to baked goods!! Really ==' should not argue when u no nothing =='

I'm a Vietnamese too, but I don't think French would use dried wood ear mushroom in their cuisine. So I quite disagree with you, I would say that bánh patê sô is majorly based on French Paté chaud, maybe 90% but they aren't the same.
