Homemade pesto is very inexpensive when you make liberal substitutions. And it's super-easy! Learn how to make pesto with these frugal substitutions:
*Substitute raw sunflower seeds for pine nuts.
*Leave out the Parmesan cheese (or substitute another kind of hard cheese if you have something on hand that you've found inexpensively)
*Substitute another kind of oil for olive oil
*Substitute kale, parsley, or another leafy green for the basil
Pesto can be expensive to make, but liberal substitutions make it more affordable for those with a small food budget.
Ingredients:
Basil (or substitute parsley or a leafy green such as kale)
Raw sunflower seeds (so much less expensive than pine nuts!)
Parmesan cheese (or asiago or romano, or leave out entirely)
Garlic
Olive oil (or another kind of oil)
Salt
Pepper
Quantities are flexible. Put ingredients into food processor and blend until it forms a paste, adding more olive oil as necessary.
