Are the seed still hard like they would be when ripe? Sometimes seeds are edible before they start forming in some seed fruit.

The skins have a lot of mango flavor. So I wash them and add at the bottom of the jars. I don't eat them though.

The Sea Salt and Apple Cider are a very good addition. But I think I would add the apple cider vinegar after it has cooled, just to preserve the probiotics.
