For the next time you cook some arroz con gandules. Boil your water in separate pot. In the rice pot, add your sofrito, tomato sauce, minced garlic, canola oil or avocado oil, and seasonings. After rinsing your rice, add it to the rice pot. Add your hot water, then add your gandules. Stir it and then add your salt. Let it cook on medium heat until the water evaporates. Turn the heat down a little bit and add the lid. You did not have the crunchy part to the rice on the bottom. You do not need to keep stirring it.

Calderon .. typically an aluminum pot ...... If you don't like aluminum or have health issues from it, a cast iron Dutch will be just as good (not the enamel covered).
