I got an insta pot for Christmas, tried making this I had no mushrooms, so I used 2 canned tined mushrooms with 2.5 cups of chicken stock to 1.5 cups rice. Turned out excellent.

I never understood the idea of adding a T of liquid, then stir for 5 min, then repeat, repeat, repeat. I have only ever seen risoto made on cooking shows. THIS is more MY style! :-D Thanks for sharing :-D

Can this be made with 3/4s of a cup of rice? I get a meal delivery and that’s all the rice they gave me for the risotto recipe. It still uses the same amount of liquid though.

Why didn't you use saute for melting your butter and cooking your onions? Your onions were burned. It's best to add your cheese along with some milk after you quick release your risotto. It comes out much more creamy.

risotto should be creamy like mac n cheese. maybe cook for a minute less, then stir on simmer until it thickens

I would guess 2 reasons why. First, no parmesan was added. Second reason would be because it looks like she used plain white rice and not Arborio or Carnoroli rice. The grains were too long and cylindrical and not nearly creamy enough.

@@jasonabbuhl6499 I just watched the video and I think she did add parm. And yes, she also used Arboria Rice. My thought as to why this looks different than traditional risotto is b/c there's NO HEAVY CREAM! I have been making Risotto in my rice cooker for years. Never, EVER, heard of a recipe for risotto with no cream. Seems odd to me b/c that's what adds the creaminess. She also didn't add Vermouth. Which gives it a very distinct flavor. I think it would be missed if not used. Although this recipe looks easy and straight forward, it's not the traditional risotto my family is used to. So I'll be searching for a recipe that's more of what I was expecting. I may try this but not sure.
