450 g flour, 200 g milk, 10 g dry active yeast; 1 stick of butter, 3 egg yolks, 45 g sugar, 1/2 teaspoon of salt -> dough recipe 230 g dates, 100 g almonds, 60 g honey, 40 g brown sugar, 1 teaspoon of salt ->> filling

Chocolate Chip Rugelach is my fave. My Ashkenazi sis (and a dear friend) got me a small tin box of these. I only eat the chocolate and chocolate chip rugelach

Can I use Honey instead of the sugar water? Oh and that egg yolk in a spray bottle is genius.

You can, but you should either warm it up some or dilute it in water, because it needs to be thin enough to be used as a thin glaze. Also note that it would change the flavor dramatically. Traditionally the flavor comes from the rich dough and a bit of filling, and the syrup makes it a sweet dish (note that neither the dough or the filling have that much sugar in them). If you coat it all in honey, it will give a pronounced honey flavor which is not traditional. But that doesn't mean they won't come out delicious.

I know what you mean. Same thing happened when I poured my tea on my hot dog, those skin grafts are expensive and insurance won’t cover them.

She split the dough in two halves originally when rolling it out, but there was no reason to show that same process twice.

I used to hammer the edges to make it as rectangular as possible. And used a ruler to make them as the same as possible.

It's available b/google -- the standard American measurements appear to be off (e.g. saying 200 ml milk = 1 and 1/4 cup when it's actually just slightly less than a cup) so probably best to go metric (which is also given in this version. www.vice.com/en/article/pavk5b/almond-and-date-rugelach-recipe

oops. that recipe is kind of sh*t -- filling amounts are off too -- should be 230 grams dates, 100 g almonds, 60 g. honey, 40 g brown sugar, 1 t. salt
