Hi All, Here with is the Caramel recipe I use. 2 Cups Sugar 1/4 Cup of Water 1 TBSP Vanilla Essence 1/4 tsp salt Place Sugar in pot on low heat. Cook until sugar starts melting add a little water and keep stirring until sugar becomes grains again, Keep stirring until sugar melts and starts to brown once sugar is at the level you want add the water salt and Essence stir until it has a good syrup consistency. Allow to cool for a couple of minutes and transfer to jar.

For those trying to make his syrup, just wanted to share my experience. First let me say, it tastes friggin' awesome! I used some Rodelle Gourmet Vanilla Extract I got off Amazon, which is 100% worth the price. I also substituted 1/3 cup of pure cane sugar (light brown colored granules) to accompany the plain white stuff. However, mine initially turned into a 10oz solid block of rock candy in my mason jar. After doing a bit of research, I found that sugar syrup isn't always easy to make, and I'm sure it was user error. Although some say if it crystalizes, you need to toss it and start over, but I wasn't giving up because it was so delicious. Here's what I did to fix it: I boiled up 4 oz of water and poured it on top the candy block, and with a spoon I stirred and scraped and made my way a 1/3 of the way. Then by doing a combination of multiple nuking, scrapping, shaking, and more stirring, I eventually made it down to the bottom. I nuked it once more and got it all fully combined. And once it cooled, it turned into a delicious thick amber colored syrup! It's not quite as thick as Beaver's in the video, but it's definitely much thicker than normal simple sugar syrup. So I would suggest 1/2 cup water for 2 cups of sugar at the start, should help keep things fluid.

One way to avoid the sugar crystallizing is to gently swirl the pot, not actually using a utensil to stir with

Hi Beaver, made some of your chocolate liquer. It is really Awesome!!!! While testing it together with an oranccello I made, I added about 2 teaspoons of oranccello to your chocolate liquer ( in a tall slim shot glass) WOW, it added a whole new dimension to it. Thanks again- going to try making the coffee liquer this afternoon

Awesome video s always, for some reason i always thought the rum was aged with the wood before the sugar syrup is added and before the desired abv is set. I noticed syrup added and set to final abv then wood added, does it make much or any difference which way this is attacked?

Great rum series! I've noticed in a few of your videos you age at low abv's and was curious as to why? I've read that with whiskey and brandies for example, the low 60's is where it does a good job of extracting more sweetness from the woods. Have you done both and prefer the lower end? Or is it just so you can have several different things aging in larger quantities all at once?

@@BEAVERDIY first, so glad you did the collab w/ Bearded so I could come across your channel. Great stuff! So was it the one where you experimented with 0, 20, 40, 60, 80? Seemed like you enjoyed the 60 the best and were curious about aging longer term on 80. So why are you aging the rum on 40? To pull more sweetness?

Hi Phillip, Jou rum moet bitter wees voor jy stook, bitter beteken die yeast het al die suiker geeet, die beste manier is om met Hydrometer te meet en te sien of hy reg is.
