I smoked a chuck roast the other day and placed it into a cast iron pot to finish up the cook and added a stick of butter, a packet of ranch seasoning powder, and a packet of aujus powder. 1oz each and just sprinkled over the top of the roast. Put the lid on and 275° until it fell apart. The amazing thing about this recipe is that the chuck roast tasted exactly like a beef short rib. Very rich and delicious. Cheers

I should mention that when seasoning the roast before smoking, don't use any salt. The ranch seasoning powder and aujus powder has enough in it already.

Aaron great video. I have a kamado jo jr and will try low n slow ribs. I have short individual ribs so would you still rekon to foil at 185? Or not necessary? I always foil my pork ribs. First time with beef. Cheers

Hey Aaron, love the vids mate! Over in NZ and have just recently really gotten into smoking and grilling. Currently running a 30 year old Weber Kettle and was looking at upgrading either to either the Bronco or the Char Griller Akorn. The Bronco is about $250 more expensive here. What would be your pick between the two? Cheers

Considering you have so many clever devices, you still prefer your barrels. Could you please explain the advantage to those of us that have never seen them let alone used them

Definitely still do. They are extremely efficient, they are super versatile, easy to use, control temps and produce great bbq. I’ve got a few older videos going through the drums showing different set ups too 🤘

@@LownSlowBasics I can't find anything like that in the UK. Do you think Weber smoky mountain gets close? It looks like your barrels have a more complex air intake and outlet.

Hey mate, did my first smoke on my offset yesterday! Turned out absolutely cracka, however it was a bit touch and go at the start there for a sec 😅, I ran into a problem with my wood, I bought a bag of ironbark splits, the bag said they were seasoned and ready to go for cooking or smoking, however when I placed the split ontop of my briquettes it refused to catch fire, instead produced huge amounts of smoke to the point where I had to take the log out and douce it in water 😬, and I should also mention I definitely had enough white hot briquettes in the firebox for it to have had no problem lighting the log, I just wanted to know if you had any insight or tips on what I did wrong, i ended up having to go quickly go buy a different bag of smoking chunks to use which saved the whole smoke, I even followed your directions on one of your other videos on how to build a proper heat source in your firebox, sorry for the super long paragraph mate. I should also mention, I did try a different log just in case the first happened to just be a dodgy piece, but same thing happened, smoked the whole neighbourhood out without ever catching fire.
