I don't think a 10 min rest is nearly long enough. I let mine rest at the very least 30 min covered with foil. sometimes I let it rest up to a 1hr depending on the size. that looked like a really good rub tho, great job

So this is the second feature that has just kinda' zoomed past the "fat cap" reference. What is it? Where does it come from? Is it trimmed from the prime rib? If so, by whom? The whole seven ribs I'm buying do not have the large pieces you are showing. Just trying to get the whole, accurate story. Thanks.

Hi Gene. The fat cap comes with a prime rib if you actually purchase one from a butcher and request it. I was a chef for years and all our roasts came bone-in with the fat cap that had to be trimmed. Unfortunately, most of your grocery store butcher shops these day purchase "boxed beef," which is already trimmed out, so you may not be able to find a roast with a fat cap.
