How To Make Sour Cream Chicken Enchilada Casserole

3 cups of cooked shredded chicken
1 ½ cups of sour cream
1 can of cream of chicken soup
1 can of diced green chilies
1 16 oz jar of salsa (if you’re not a fan of salsa, you can use a can of diced tomatoes or tomato sauce)
6 - 8 flour tortillas cut into pieces
16 oz of shredded Monterey Jack & Cheddar cheese
Mix together sour cream, soup, green chilies and salsa. Place enough of the sauce to lightly cover the bottom of a 9x13 inch baking dish. Place half the tortillas over the sauce. Top tortillas with half of the chicken, then top chicken with half of the cheese. Pour half of the sauce over the cheese and start over with the layers ending with remaining cheese. Cook in a 350 degree preheated oven for 30 to 45 minutes or until casserole is heated through and cheese is melted. This can be made ahead of time and frozen before baking. Thaw casserole before baking.

Mmmmm! I will be making this. I make a similar casserole using beans and carnitas. I use 12 small corn tortillas cut in half and layer half overlapping them for each layer of sauce in the dish.

We make these enchiladas but we don’t use the salsa. Just the sour cream, cream of chicken and diced green chilis. And we use Monterey Jack cheese and make individually enchladas. It’s been my favorite meal since I was a little girl!!! I absolutely love it!

You could use more milk. But, I'm not sure how that would be. If you have any chicken bullion cubes, you could use those with water
