Basic Ingredients for 8 lbs of beef brisket
150 grams of fresh chopped/paste shallot
or red onions
70 grams of fresh chopped/paste garlic
140 grams of fresh galangal paste
46 grams of coarse salt
-185 grams of sugar
15 grams of Taprika powder
21 grams of (Knorr)
200 grams of cookrd rice
4 tbsp of water( optional)
2-4 tbsp of Oyster sauce ( optional)
10 grams of dried chilli flaks (optional)
2.5 teaspoons = 12 milliter of food coloring ( optional)
Note 1: after marinated the beef, please leave it in room temperature overnights to increase the sourness then you can proceed the casing process.
