I made this dish and it was delicious. I used whole chicken parts and singed the skin with boiled water to get out the excess fat. Although with the parts I had plenty of oil from the skin. Thank you for sharing. My family loved it. Note: This weekend I am going to try to make the Huevos Enbobijados :)

Just made this and it was fabulous. But there is one very important ingredient that my mom always added when I was a kid- sliced manzanilla (green) olives. I added 1/2 cup of green olives along with the tomatoes. After cooking has completed, toss a few more fresh ones on top of everything. Trust me, you will love it.

Claudia, have someone level up your gas stove. I noticed that it leans forward. If you level it up the oil in your pans will evenly coat the bottom of the pan. Your veggies were rolling towards the front when you were roasting them. Your show is wonderful! Have a great day!

This recipe was very good and had lots of flavor! Cook time took more time than what is stated in video so not a weeknight after work friendly meal. I seasoned my chicken with Badia all purpose seasoning and added Spanish olives and added a little more water, other than that followed recipe as written. I have made a different arroz con pollo from KZbin and no where near the flavors of this one. Great recipe Claudia!

This recipe was great! Super easy to make. I added a can of fire roasted tomatoes instead of romas and I also added a small can of hot green chilis. Was super good and the chicken came out perfect. Great video!
