Recipe:
3 ounces of prosciutto (preferably prosciutto di parma) chopped into small pieces
Frozen tater tots (amount varies and I like the brand Alexia)
9 eggs
Approximately 3 ounces of cheese (you can use cheddar or a mexican blend)
½ teaspoon or more (depending on how spicy you like things) crushed red pepper flakes
½ teaspoon dried cilantro
2 tablespoons of butter, cut into small cubes
Salt and pepper to taste
Instructions:
Position a rack at the top level of your oven and set the oven to broil.
Set a pan (preferably cast iron) to medium heat and add in tater tots until about ⅔ of the pan is covered. Cook for 5 minutes
In a large bowl, whisk eggs and all seasonings (one at a time) until combined and a little airy/fluffy.
Now, go back to the stove and shake the pan to move around the tater tots and then cook for another 5 minutes. During this time, you can shake the pan often to make sure that the tater tots are cooking evenly.
Add in the prosciutto and turn down the heat to low. Cook for another 5 minutes.
At this point, you want to make sure that the prosciutto is evenly spread throughout the pan and you want to squish down the tater tots with a spatula.
Add in the egg mixture and turn the heat up to a medium low. Cook for 10 minutes.
Sprinkle the cheese all over the top to get a nice even layer.
Place in the oven and broil for 1-2 minutes. Check after 1 minute because it can burn very easily.
Let sit for 15 minutes, then cut and enjoy!
