I just made this. Unfortunately my coconut cream had not separated into solid and liquid so next time I won’t start it upside down in the fridge. I added a little more xanthan gum and an extra tablespoon of coconut oil and it’s still taking longer to firm up but I think it’s going to work! So creamy! I used Monk fruit sweetener, almond butter, some decaf coffee crystals and some Southern Comfort whiskey. I meant to add shredded coconut but forgot. I’ll do that in the next round!

Allulose would be the best sweetener of choice for this, as like regular sugar it doesn't crystalize in the freezer.

the liqueur also helps with keeping the ice cream from getting too hard, but any kind will do. I've seen some add a tbsp of vodka, so you don't taste it but it helps with that icy issue. Thanks for this, I'm not vegan but this is definitely something I will try 😊

🌸 I can’t wait to try this, I haven’t eaten sugar since last year Dec and have been missing this especially when we had heatwave. I made homemade ice lollies in moulds for freezer with sugar free juice lol. I will not recommend trying pure lemon juice with water as it made my mouth curl in lol 😂🤣. I’m adjusting my portions at present

Dearest Heavenly Fan I made the ice cream following your instructions and it turned out absolutely amazing. My hubby and friends have devoured it in no time and keep asking me when am I going to make it again. So this morning I got all the ingredients together but decided to change the flavour using the spices of the classic Indian chai. Two bags of English breakfast tea, Cardamom ginger cinnamon a dash of pepper and some vanilla extract. On the second churning I will add a mix of macadamia pecan some real Italian pine nuts and some toasted coconut slivers. I’ll let you know the results. ❤️❤️❤️

omg, this sounds so delicious! I am having trouble of getting coconut cream atm, also the blocks of creamed coconut, have sudddnly dissapeared from the supermarket shelves - so will have to search further, as I just have to try this - I do know of similar recipies, but none have the zanthan gum 😉, secret ingrediant I should immagine! You know, its sometimes been hard when everyone is eating ice cream everywhere, I have to look away lol now I can enjoy it as well! Just made more of your rye bread again today, and froze most of it. Also if you are comfortable with alcohol, one ounce of vodka in your mixture will keep it soft enough to scoop straight out of the freezer without any thaw time.
