I cannot thank you enough for this video… I am a visual and auditory learner..and your video changed my life… from the moment I made these flour tortillas about 3 months ago to today they have been great!!!! I got exactly what you were wanting people to get about the water/flour ratio.. the hot water etc.etc… oh my goodness these are addicting.. I get my cassava flour from Bob’s Red mill and it works just like you say yours does… I didn’t know what tiger milk flour was so I used my almond flour instead and continue to use it to this day… I use my Himalayan salt..and my super hot berky filtered water… ,,the very first time I made these I forgot to put in the oil (avocado is what I use) during the mixing stage… so when I was at the hand mixing stage when you add the oil again I just added the oil then and they came out perfect.. so ever since then I only put in a bit of oil after it has rested just a sec just before you knead it in the final stage just before you tear off your first ball.. and they come out great…. Todays were absolutely perfect… sooooo good.i love it when you turn them over and they bubble up like flying saucers.. I cook my on my dry cast iron round griddle that i got from target..thank you thank you thank you.. I’ve been off gluten 12 years and this is my first opportunity to finally have flour tortillas ..Thank you so much for all your time in making this and other videos… sooooooo appreciative..💕💐😊God’s blessings to you

So the secret is hot water! I've tried unsuccessfully a few times with cassava flour and tapioca starch but today when I used hot instead of cold water I finally got the right texture❤️🙌🏾👏. Many thanks for the helpful tips

OMGee!!! I've seen this video before but totally missed the hot water bit 😂 So I recently resorted to making sweet potato and cassava roti and it is only clicking now that the HEAT was activating the cassava to behave better than it does in cold water! I'm so glad I rewatched this video today❤❤❤

Thank you for your recipe. I have borrowed the basic recipe and come up with lovely savoury rotis that are great for breakfast. In the dry mix, I have added a finely chopped onion, sea salt, lemon juice, coconut aminos, chopped fenugreek leaves and coriander leaves. I’ve cooked with a little EVO oil and it’s delicious. I’ve also made a stuffed paratha by rolling out two rotis from your original recipe and stuffing with mashed boiled tapioca that is seasoned with sea salt, coriander leaves, chopped onion, lemon juice, and coconut aminos. They turned out really well.

Hi guys, I live outside of the US (France) and the Otto’s cassava flour was overpriced so I tried « neo flour prenium » and it worked just fine! I had a perfect texture and the same puffiness as your tortillas. Thanks for sharing your recipies

A very good recipe. Fluffs up just like wheat roti. I recently bought the gluten free roti flour from the Indian store for my daughter who has type 1 diabetic/celiac/thyroid..I’m not keen on the flour as it has soy in it and is quite dry. Will definitely try your recipe. Thank you

One thing when kneading any flour for dough is that working with hands helps soften it and get all the dry bits of flour incorporated. So I would encourage hand mixing instead of using utensil. This is just coming from experience with making all kinds of breads and doughs. Might try that to compare to using utensil. :) Excited to try this.

I saw cassava flour on a half price deal, I am already vegan but for medical reasons now also gluten free, so i looked up a recipe for using my cassava flour and came across this detailed video, which i am so grateful for because i cooked a few gluten free things and failed.. i am hopeful watching all your detail that this will not be a failure for me. thank you and looking forward to seeing some of your other video's. No baking powder needed. It doesn't rise like bread. It just puffs up while cooking.

Yes you can. Place some parchment sheet between each one so it's easy to thaw a few at a time.

I am not sure how they will stay if you Freeze them uncooked. But you can certainly cook them all the way and then freeze them. You will need to thaw a couple hours at room temperature and then warm them in a pan or microwave.

I don't know the reason. But the texture of their organic flour is very different from their Premium one. And the tortillas/ rotis made with the organic one taste different too.

Yes you can avoid it if you want but I find the dough to be better - non sticky when you add oil

Hello no cassava flour and tapioca flour are slightly different even though they are both made from the same root vegetable cassava. The cassava flour has all the fiber included in it while tapioca flour has only starch in it.

Most people tolerate cassava flour well. However there are a small % who have gut issues and who may be sensitive to cassava flour.

You can try....but I recommend you make them thicker so that you can stuff inside the pockets. So maybe make 4-5 tortillas using this recipe.

I am going on AIP diet. Can you tell how often can I eat this roti, I am already eating water chestnut roti twice a week, can you guide me on this please

AIP diet does not have restrictions on calories however in general a balanced carb/protein/fat ratio is recommended. I like to recommend a 40/30/30 carb/protein/fat ratio where vegetables should form the majority of the carbs bucket with a small % for grain free flours like cassava. And each individual is different. Initially I used to have cassava rotis once a day but over time I do not feel the need for them as much and really focus on getting my nutrition from fish/meat and veggies. Hope that helps.

I do understand to maintain a healthy balance of carbs in my diet but living in India I was too used to eating rotis to introducing this flour will open up many new options for me. I was so excited after watching your video that I immediately went to Amazon and bought you AIP recipe book. Waiting on pins and needles for it to arrive. I have been eating AIP for 6 months now - dragging my husband along for the adventure. I haven't found AIP boring - I have found a few recipe books that have made it a breeze. So well explained and will try it! Hashimotos and need for AIP diet (from strict keto) led me here! I have read medical articles that cassava is goitrogenic for people suffering with low thyroid and to avoid it for iodine absorption, any truth to this?

It's not exactly like the wheat roti but kind of like a soft roomali roti that is made with all purpose flour. I have another Chapati recipe that uses a combination of cassava and water chestnut flour which is very similar to the traditional wheat roti. Check that video out.

I am using the exact same cassava flour brand minus the tiger nut flour ye and find that it does not puff up for me. The texture and look looks different, and I’m not sure what I’m doing wrong )):

Are you using hot water to knead? And are you using cast iron pan to cook it? Both are important. Not sure why it's not.

No Cassava flour and tapioca flour are two different things although they are made from the same cassava tuber. Cassava flour included the fiber part too whereas tapioca flour only has the starchy part. For this roti recipe, you need to use cassava flour only. Tapioca flour will not work for this recipe.

Mine is coming out really hard after fried. When mixing it's kind of crumbly doesn't look like yours. I'm using tiana cassava flour and don't have any other flour. You have any idea what could be wrong?

I think it's the brand of cassava flour. Diff brands behave very differently. Did you try to add more hot water?

Good question but unfortunately I don't know what brands are good in India as I have not tried any of them. I do see some brands available on amazon.in so maybe you can check the reviews. If you do find a good one, please do share! Good Luck!

I guess the premium is not organic but there's a great difference in texture and taste of the rotis and I prefer the Premium one.

What kind of pan did you use? The pan needs to be really hot. Also cast iron is the best.

It is much safer to use a pan for beginners when making your cassava tortias.The pan cause severed damaged to a person hand.

I recommend not to use Anthony's goods organic cassava flour as rotis made using it have a wierd texture. But you can use Otto's organic cassava flour.
