My grandma used to make her cornbread from scratch the night before or in the morning and let it sit out to get cold. Then she’d cook the onions and celery, with sage thyme and rosemary using some of the turkey drippings. Then she’d chop up the neck and the giblets and add that to the corn bread and veggies. Then thin it out with water. Bake till hot then it was ready. I have to admit, there wasn’t much left at the end of the night. I miss her dressing.

My mother just passed away last year, so this is our first Thanksgiving without her. I’m gonna try Thanksgiving dinner. I’ve been trying to get her recipe just because tradition, but I was the same way. I did not like her dressing after it was cooked, she always plated mine before it was put in the oven amazing. I grew up eating Jiffy cornbread dressing. My mom didn't add eggs to her dressing either. She would make her gravy using the turkey drippings. She also would open up a can of the Oceanspray jellied crannberries and slice it, along side of her cornbread dressing and her homemade yeast rolls. I sure miss my mom and her cooking. She taught me how to cook all kinds of meals. I recently made a batch of her homemade yeast rolls. I received tons of compliments. They turned out to be hamburger bun sized rolls, lol. My Mother added celery,green &red pepper & onion, chicken broth, cream of chicken soup with jiffy corn bread mix & bread crumbs with sage, black pepper, Very moist & delicious I make mine the same way.

Yea, I use cream of mushroom soup to keep it moist and also added more eggs after crumbling the cornbread. It makes it rich tasting and not like a brick. I’ve never seen anyone use jiffy mix to make the cornbread. I make it the old school way. I’ll have to try it with Jiffy. I also use chicken poultry for seasoning and a tad bit of sage.

Traditional dressing has more broth to keep it moist and must be cooked at a lower heat. Campbell's soup "creams" just add more salt, seasoning, flour, and preservatives. Both work, but I ended up making traditional during Lockdown, and it was just as good. The chemistry is what makes the difference, adding more broth, slowly cooked at lower temp.

The reason yours is so "creamy" is because you leave out the egg. Most grandmas add the egg to bind it because they add more chicken stock than you do. People also cook it longer than you do. I will be trying it your way this year! Thanks for sharing. I love to watch you guys.

I was also told by my mother not to use Jiffy for cornbread dressing, but I’m definitely going to try this recipe. 🔥👏🏼👍🏼 Many of us grew up watching our parents and grandparents spend hours in the kitchen making their scratch, handed down recipes. But just like you, I’ve made them, then developed a few time-saving tweaks through the years, but still kept 𝙖𝙡𝙡 the flavor of the old school versions. I think that’s part of becoming a good cook. I remember my MIL telling me about Kitchen Bouquet many years ago. That stuff is old school!😂 Been using it ever since.

The reason grandma's dressing seems harder is because they are cooking the cornbread dressing longer to ensure it's cooked all the way. Sometimes, there may be more ingredients added, ie. Can of cream a chicken & more chicken broth, giving it a soupier texture. This would require you to cook the dressing longer. Different strokes for different folks & everyone's taste palette may differ. Peace & Love. I enjoyed watching! ❤

Same method to the T cuh I just use cream of chicken , cream of mushroom, cream of celery soups , the small cans when I mix everything together with the chicken broth ,sage ,chicken bouillon onion powder a lil garlic powder, and my sautéed veggies onion, celery,bell pepper

I do the exact same thing only I use a super wide cast iron skillet and crumble the cornbread into the cooked vegetables in the skillet add seasoning, broth, a little heavy cream, mix and put the skillet in the oven 😊

I use 1 Jiffy and one Martha White yellow.( not sweet) with Trinity, sage sausage. lump crabmeat, and shrimp. No egg. Always a empty pan. This looks good too.😊

When I do dressing a use 2 boxes of jiffy and do homemade cornbread. I follow the instructions on the yellow cornmeal bag but I double the recipe. I noticed eggs was not used before you put the dressing in the oven, so I believe that’s why your grandmother’s dressing seemed stiff. I use to use eggs , but because of that reason I no longer do. My family and friends love my dressing and collard greens.

Thank you. To darken gravy you can also add a tablespoon of instant Folgers coffee in lieu of the chicken bouquet. For meat you can exchange chicken with gizzards or oysters. Yummy! Oh for moist stuffing add a can of carnation milk in lieu of regular milk.your recipe looks delish. I’ll try it and will post a pic.
