I used to cook steaks this way, but as you can tell from the video, it will set off all your smoke detectors and you'll have to air out the rest of the house if you want to breathe in it. The steaks do come out great though. Maybe this can be adapted to a skillet on an outdoor grill. I have no solutions.

Little late on the response but let me help you out. This method is terrible; evident from the poor sear in the video. All you need to do is do a nice sear in a stainless (preferred) frying pan on both sides usually about 1.5 mins each side (seals meat), then stick it in the oven, raised off a baking sheet is preferable and cook about 4 minutes per side at 400F. Rotate the steaks half way between to make it an evenly cooked throughout. Time might vary depending on oven quality and doneness you prefer. I usually add rosemary and garlic under the steak while its cooking in the oven. Don't forget to remove 5 degrees sooner than desired temp and let rest for 5-10 minutes for perfection.

Disagreed. I know it’s not classic training but garlic salt on steak is quite common, especially in the south.
